Eclipse Foods makes plant-based dairy products, such as ice cream, cheese, and milk, that aim to closely resemble traditional dairy in taste and texture. Its approach involves using plant ingredients to replicate the molecular composition of dairy, enabling creamy, dairy-like products without animals. The company reaches customers through direct-to-consumer online sales and partnerships with grocery stores and food service providers, offering competitive pricing to encourage switching from dairy. Compared with competitors, Eclipse Foods focuses on scientifically matching dairy’s texture and flavor with plant-based ingredients and builds scale through a mix of online sales and wholesale channels. Its goal is to lead the plant-based dairy market by providing sustainable, ethical, and delicious alternatives that satisfy vegans, lactose-intolerant individuals, and environmentally conscious consumers.

Eclipse has officially debuted its Non-Dairy Whole Milk crafted with chickpea and pea protein, which was previewed at Expo West.
Eclipse Foods, the plant-based brand aiming to make products that are indistinguishable from conventional dairy, has announced the launch of its new Non-Dairy Whole Milk. The product is said to deliver on flavor, stability, sweetness, and whiteness — areas where Eclipse says most plant-based milk alternatives fall short. The milk has a neutral taste, while its stability allows it to foam in hot and cold drinks without settling at the bottom of the cup.The Non-Dairy Whole Milk was developed by isolating proteins from peas and chickpeas to replicate the molecular structure of milk. It is shelf-stable and will target food service partners, including coffee shops, smoothie bars, bakeries, and cafes. The new product was inspired by the dairy region of Hokkaido, Japan, and the packaging design evokes Japanese culture.© Eclipse Foods“A true replacement”Eclipse Foods was founded in 2019 to provide dairy alternatives that require no sacrifice on taste, texture or functionality. The brand offers a range of non-dairy ice creams, which are available for food service, as an ice cream mix for scoops shops, as a soft serve mix, and in single-serve cups.In 2022, Eclipse secured $40 million in Series B funding, which it said would be used to accelerate retail and food service growth, increase RD, build out its team, and expand its marketing. Last year, the brand introduced a new product line, Eclipse Bonbons, and launched its ice cream in Japan under the name “eclipseco”.“We are so proud to debut the first ever non-dairy milk that looks, tastes, and acts like conventional dairy,” said Thomas Bowman, co-founder and CEO of Eclipse. “It is a saturated market, but we knew we could develop an outstanding product that wasn’t just an imitation of dairy, but a true replacement.”Eclipse Foods will showcase the Non-Dairy Whole Milk at the 2025 Specialty Coffee Expo in Houston, TX, at booth #2306
Expanding its innovative portfolio, Eclipse launched its ultra-creamy Non-Dairy Whole Milk in April 2025, a milk alternative crafted to replicate dairy's rich taste and performance in any fancy beverage or just your daily cup o' Joe.
Plant-based ice cream brand Eclipse Foods has announced the launch of a new product line, Eclipse Bonbons. This new addition to its portfolio introduces a series of non-dairy ice cream bonbons, developed by an award-winning chef to mimic the creamy texture and rich flavors traditionally associated with dairy-based ice cream. These bonbons combine ultra-creamy non-dairy ice cream with a velvety chocolate shell and a variety of crunchy toppings, designed to provide a luxurious taste experience. The launch will feature three flavors: Chocolate Hazelnut Truffle, Peanut Butter Pretzel, and Coffee Almond Crunch, which are scheduled for release in March 2024 in select US grocery stores. “Our goal has always been to create plant-based products that stand toe-to-toe with their dairy counterparts”
