The core offering, the Piada, is a thin-crust wrap baked on a stone grill and filled with customizable ingredients, alongside pasta bowls, chopped salads, and power bowls; all profiles are prepared in an open kitchen with a chef leading each location. Dishes use house-made sauces and fresh ingredients, with options like Piada Pockets and various sides to customize flavors. Piada Italian Street Food plans new location in Rowlett. Piada Italian Street Food could open a new Lakeview Parkway location in late 2026. Published Date: July 10, 2026, 5:12 PM EDT Piada Italian Street Food, the fast-casual chain known for its hand-rolled Italian flatbreads, plans to bring a new location to Rowlett. According to public filings, the restaurant is planned for Suite #100 at 2700 Lakeview Parkway, with a construction completion date targeted for November 2026. Video Muted What Now Dallas reached out to Piada Co-Chief Executive Officer Lance Juhas, who confirmed the brand's 2027 growth strategy will again lean heavily on Texas. "Our growth plan for 2027 will again concentrate in Texas. Looking forward to more great locations," Juhas said via email. An exact opening date for the Rowlett location has not been announced yet. The Rowlett location would mark another entry into the Dallas-Fort Worth market for the brand, which already operates several North Texas locations, including spots in Dallas, Plano, and Fort Worth. Lakeview Parkway is a busy retail corridor near Lake Ray Hubbard, putting the new restaurant within easy reach of Rowlett's growing residential base along the U.S. 66 and I-30 corridors. What Now has tracked Piada's steady march across North Texas for years, from its first Plano location on Coit Road to its unexpected debut inside DFW International Airport, the brand's first U.S. airport storefront. The chain has also expanded into Euless, and What Now's Austin, Houston, and San Antonio teams have covered a wave of new outposts in Pflugerville, Leander, Pearland, Katy, and Greater San Antonio - evidence of just how aggressively the brand is growing statewide. Piada's concept traces back to a 2010 trip to Rimini, Italy, where founder Chris Doody found inspiration in the city's street food carts and family-run corner markets. That trip led to a menu built around hand-rolled piadas, chopped salads, and tossed pastas, all prepared by chefs working an open kitchen rather than a traditional back-of-house crew. Since opening its first restaurant that year, the chain has grown to roughly 60 locations across seven states, including Ohio, Indiana, Texas, Minnesota, Kentucky, Pennsylvania, and North Carolina. Piada Italian Street Food could be coming to Leander. Piada Italian Street Food could be planning its first Leander location at the Northline development, expanding the Ohio-based fast-casual Italian chain's footprint in Texas. Published Date: June 26, 2026, 12:52 PM EDT According to public filings, Piada Italian Street Food plans to bring its fast-casual Italian concept to Williamson County. The chain could open a new location at 516 E. San Gabriel Pkwy., Suite 110, within the Northline development in Leander, with construction's completion date targeted for early September 2026. What Now Austin reached out to Piada Italian Street Food, but could not get a response at the time of this publication. Video Muted Piada Italian Street Food blends ancient Italian tradition with modern fast-casual dining, inspired by the centuries-old piadina flatbread of Rimini, Italy, and brought to the U.S. by founder Chris Doody after discovering street food carts there around 2008-2009. Doody opened the first Columbus, Ohio location in 2010 with a focus on fresh, customizable Italian wraps and bowls. The menu centers on made-to-order piadas, pasta bowls, and chopped salads, all prepared in an open kitchen format. The filing marks what could be Piada's first foray into the Leander market, as the brand continues its steady expansion across the Lone Star State. There are currently nearly 70 Piada Italian Street Food locations across seven states, with the brand's eateries primarily concentrated in Ohio and Texas, where 19 locations were already open as of early 2026. What Now has previously covered the brand's growth in other Texas markets, including two new locations planned for the Greater San Antonio area. Leander's rapid residential and commercial growth in recent years makes it an increasingly attractive target for fast-casual chains looking to plant roots in the Austin metro's northern suburbs. Jun 8 2026 The Summer Fresca beverages and dirty soda customizations will be available at all Piada locations nationwide from June 2 through mid-September. Piada Italian Street Food, the nation's leading fast-casual Italian restaurant concept, announced it is bringing fresh summer flavors to its beverage lineup with the launch of its new Summer Fresca beverages and customizable Italian crème-style "dirty soda" additions beginning Tuesday, June 2 through mid-September. Inspired by the growing "field-to-beverage" trend and the bright flavors of summer farmers markets, Piada's new Summer Fresca blends watermelon, cantaloupe, strawberries and a hint of lemon into a refreshing seasonal drink available for $4.25. Guests can enjoy the Summer Fresca as is or make it "dirty" with Piada's Coconut Cold Foam, the brand's premium non-dairy coconut cream topping, for an indulgent twist on the summer beverage. "Summer is all about fresh, vibrant flavors that feel both nostalgic and refreshing," said Dawn McClung, Manager of Culinary Innovation at Piada Italian Street Food. "We wanted to take familiar summer fruits and put our own spin on them. The cantaloupe adds a subtle sweetness and unexpected twist that makes the drink uniquely Piada." Piada is also introducing a new way for guests to customize any fountain beverage in-store with its Italian crème-style "dirty soda" addition. For an additional 75 cents, guests can add Coconut Cold Foam to any soda for a richer, dessert-inspired experience. Unlike traditional dirty sodas, Piada's version features a thicker whipped coconut cream with a subtle tropical flavor designed to elevate classic soda combinations, including customizable favorites like Dirty Dr Pepper. "We're leaning into the dirty soda trend, but making it our own," McClung said. "Our Coconut Cold Foam transforms a refreshing beverage into something more indulgent while still feeling light and craveable." To celebrate the launch, Piada will host a Summer Fresca Launch Party Pop-Up at Lynd Fruit Farm's Market on Morse (9399 Morse Road SW, Pataskala, OH) 43062on Friday, June 12, from 10 a.m. to 1 p.m. Guests can sample the new Summer Fresca, receive exclusive Piada swag while supplies last, and enter to win prizes including Free Piada for a Year, a $100 Lynd Fruit Farm gift card, and a $100 gift basket by scanning a QR code at the event.
