Requirements
  • A high school diploma or equivalent education is required.
  • Two to three additional years of hospitality management education or equivalent experience are required.
  • Thorough knowledge of general business administration practices, state liquor and sanitation laws, and food and beverage service operational practices and procedures is required, acquired through at least four years of similar experience in progressively responsible positions.
  • Prior supervisory experience is required.
  • The employee must be able to stand, walk, sit, kneel, use their hands to handle or feel, and talk or hear.
  • The employee must regularly lift or move up to 25 pounds.
  • The employee must have close vision, depth perception, color vision, distance and peripheral vision, and the ability to adjust focus.
  • The employee must comply with all applicable federal, state, and local safety and health regulations.
Responsibilities
  • Supervise the service staff on the floor during all meal periods, ensuring food and service standards are maintained, maintaining the reservation system, managing new staff orientation, and coaching and training new and existing staff.
  • Verify the accuracy of all member and other charges, including member numbers, names, signatures, and authorization codes for credit card charges.
  • Ensure beverage product quantity levels and quality standards are maintained in production and service facilities to achieve member and guest satisfaction.
  • Assist service staff as needed in all areas of food and beverage operations.
  • Maintain the purchase order system and par-stock levels for food and beverage inventories, and implement and monitor ordering and receiving programs to ensure proper quantity and pricing on purchases. Assist with the monthly inventory system.
  • Assist in implementing and monitoring internal controls for the Food and Beverage Department, maintain responsibility for departmental payroll, and monitor policies, procedures, and controls.
  • Use the Kronos timekeeping system to monitor and verify departmental payroll, create schedules, enter restrictions, review the approaching overtime report daily, and assign staff to reduce or eliminate overtime.
  • Manage the dining room to ensure member and guest satisfaction.
  • Inform the Food and Beverage Director or General Manager about intoxicated members or guests and refuse service to clearly intoxicated individuals.
  • Operate within all guidelines, policies, standards, and constraints established by PGA TOUR Golf Course Properties, Inc., including mandatory standards of operation for food and beverage operations.
  • Ensure service procedures comply with TPC Brand Standards, including promptly greeting and seating members and guests.
  • Work with service staff and bartenders to develop daily, weekly, and monthly cleaning schedules, and inspect all areas to ensure compliance.
  • Assist with expediting food and beverages as needed.
  • Ensure end-of-shift point-of-sale procedures are followed consistently and service checkouts are reviewed and approved.
  • Ensure compliance with operating guidelines related to the R.A.M. or TIPS programs and all applicable state and federal laws, rules, and regulations governing alcohol, cigarettes, and tobacco.
  • Complete special projects and other assigned duties.
  • Work shifts as necessary based on business levels.
  • Manage employees and be responsible for their performance management and hiring within the department.
