Requirements
  • At least one year of previous cooking experience in a sushi-focused restaurant is required.
  • Previous culinary hotel work experience or similar-environment experience is required as an asset qualification.
  • The candidate must be able to speak, read, write, and understand English.
  • The candidate must have good verbal and written communication skills.
  • The candidate must be able to read and write to facilitate communication.
  • Tuberculosis clearance is required.
  • Food Safety Certification or ServSafe Certification is required.
  • A high school diploma or equivalent and/or vocational training is required.
  • Candidates must possess identification proving authorization to work in the United States under the Immigration Reform and Control Act of 1986.
Responsibilities
  • Ensure high quality and consistency of food preparation and presentation according to Fairmont standards.
  • Ensure the overall cleanliness and maintenance of the kitchen.
  • Maintain a clean workstation and minimize waste.
  • Prepare sushi rolls, nigiri, and other appropriate dishes and techniques in a sushi venue.
  • Assist Sushi Cook I and II with preparation and maintenance of the sushi concept in Pilina.
  • Respond positively and promptly to internal and external guest requests.
  • Check service stations for necessary equipment and set up ice, dishes, and utensils; replenish them as needed.
  • Maintain full knowledge of menu items, garnishes, contents, and preparation methods.
  • Act as a role model to junior staff by maintaining a professional work ethic and demonstrating sound cooking skills.
  • Follow Hawaii Department of Health and Environmental Health Consultancy food-handling safety standards.
  • Organize time so side work is completed according to shift demand and preparation schedules.
  • Provide timely, personalized, friendly, and efficient service to the culinary team.
  • Provide engaging, personalized, timely, and efficient service to guests while maintaining an aloha spirit.
  • Focus attention on guest needs and remain calm and courteous at all times.
Desired Qualifications
  • Previous culinary hotel work experience or similar-environment experience.
  • Previous experience in a luxury hotel environment.
  • A culinary degree from an accredited college, university, or trade school.
