POSITION SUMMARY

The Cook / Lead Cook is a hands-on, detail-oriented leader responsible for operating commercial cooking equipment to produce gummy slurry to precise quality specifications, including Brix, pH, texture, and consistency standards. This role leads the cooking process on the floor, guides a small team of operators through each batch, and is meticulous about accuracy — from ingredient measurements to batch record documentation. The ideal candidate treats every batch with the same level of care and precision, catches issues before they become problems, and is comfortable being both a working cook and a hands-on team lead.

KEY RESPONSIBILITIES

Operate commercial cooking systems such as CP80, CP600, kettles, hoppers, and related equipment with precision and consistency.
Prepare gummy slurry according to formulas, production schedules, and quality standards, with meticulous attention to accuracy at every step.
Monitor and control temperatures, cook times, ingredient blending, and batch consistency, adjusting proactively to stay within specification.
Prepare pectin, gelatin, and other confectionery mixtures accurately, following exact measurements and formula instructions.
Verify Brix, pH, weight, and appearance standards throughout production, catching and correcting deviations before they impact the batch.
Complete batch records, production logs, and documentation accurately, legibly, and in real time — treating batch records as a critical, non-negotiable part of the job, not an afterthought.
Maintain a thorough working knowledge of batch record requirements and ensure all entries are complete, accurate, and audit-ready.
Follow GMP, food safety, sanitation, and workplace safety procedures at all times.
Lead a small team of cooks/operators on the floor, assigning tasks, keeping the team on pace, and stepping in hands-on wherever needed.
Lead by example with urgency, accountability, and professionalism, setting the standard for detail and quality on the shift.
Communicate effectively with operators, supervisors, maintenance, and quality teams to keep production running smoothly.
Train and mentor team members on cooking procedures, quality checks, and batch documentation practices.
Work collaboratively with others while maintaining composure under pressure and tight deadlines.
Perform setup, changeovers, cleaning, and basic troubleshooting of cooking equipment.
Ensure tanks, lines, and downstream equipment remain clear and operating efficiently.
Support continuous improvement efforts to maximize uptime, output, and consistency.

QUALIFICATIONS

Required: Prior cooking experience in the confectionery industry (gummy, candy, syrup, bakery, or similar production environments).
Proven leadership experience, including direct, hands-on experience leading or coordinating a small team on the production floor.
Highly detail-oriented and meticulous, with a demonstrated ability to catch errors, maintain consistency, and hold high standards batch after batch.
Working knowledge of batch records and production documentation, including accurate real-time recordkeeping practices.
Ability to work well with others in a team-oriented environment while also working independently and taking ownership of outcomes.
Strong ability to perform under pressure in a high-volume production setting without sacrificing accuracy or quality.
Experience using pH meters, refractometers, scales, and measuring equipment preferred.
Comfortable being hands-on — this role is on the floor and in the process daily, not just directing from the sidelines.
Ability to stand for extended periods and lift up to 50 lbs.
High school diploma or GED preferred.

WORK ENVIRONMENT & PHYSICAL REQUIREMENTS

Full-time production floor role based at the Gardena, CA facility.
Schedule: Full-time 2nd shift, with weekends as needed — flexibility required.
Extended periods of standing, walking, and hands-on equipment operation throughout the shift.
Ability to lift up to 50 lbs.
Fast-paced manufacturing environment requiring sustained attention to detail and the ability to manage multiple priorities at once.
PPE required per facility and food safety guidelines.
