Requirements
  • Prior cooking experience in the confectionery industry, such as gummy, candy, syrup, bakery, or similar production environments.
  • Proven leadership experience, including direct, hands-on experience leading or coordinating a small team on the production floor.
  • The ability to catch errors, maintain consistency, and uphold high standards batch after batch.
  • Working knowledge of batch records and production documentation, including accurate real-time recordkeeping practices.
  • The ability to work effectively in a team-oriented environment while also working independently and taking ownership of outcomes.
  • The ability to perform under pressure in a high-volume production setting without sacrificing accuracy or quality.
  • The ability to stand for extended periods and lift up to 50 pounds.
  • The ability to work a full-time second shift, including weekends as needed.
  • The ability to wear required personal protective equipment in accordance with facility and food safety guidelines.
Responsibilities
  • Operate commercial cooking systems, including CP80, CP600, kettles, hoppers, and related equipment.
  • Prepare gummy slurry according to formulas, production schedules, and quality standards.
  • Monitor and control temperatures, cook times, ingredient blending, and batch consistency, making proactive adjustments to remain within specification.
  • Prepare pectin, gelatin, and other confectionery mixtures using exact measurements and formula instructions.
  • Verify Brix, pH, weight, and appearance standards throughout production, correcting deviations before they affect the batch.
  • Complete batch records, production logs, and documentation accurately, legibly, and in real time.
  • Maintain working knowledge of batch record requirements and ensure entries are complete, accurate, and audit-ready.
  • Follow good manufacturing practices, food safety, sanitation, and workplace safety procedures.
  • Lead a small team of cooks or operators on the production floor by assigning tasks, keeping the team on pace, and providing hands-on support.
  • Set the standard for detail and quality on the shift through urgency, accountability, and professionalism.
  • Communicate with operators, supervisors, maintenance, and quality teams to keep production running smoothly.
  • Train and mentor team members on cooking procedures, quality checks, and batch documentation practices.
  • Perform setup, changeovers, cleaning, and basic troubleshooting of cooking equipment.
  • Ensure tanks, lines, and downstream equipment remain clear and operate efficiently.
  • Support continuous improvement efforts to maximize uptime, output, and consistency.
Desired Qualifications
  • Experience using pH meters, refractometers, scales, and measuring equipment.
  • A high school diploma or GED.
