About the Role
As Bar Manager reporting to the Restaurant Manager, you will oversee our two bars, Shutters Restaurant & Bar, and Rick Stein at Coogee Beach. You will lead all bar operations, inspiring and developing a high-performing team while delivering exceptional guest experiences. Working alongside passionate professionals, you will champion a brand renowned for its excellence, authenticity, and innovation, ensuring every guest interaction reflects our commitment to outstanding service, premium beverages, and memorable moments.
A little taste of your day-to-day
Lead the day-to-day operation of the bars from the floor, working alongside the team to deliver exceptional service, maintain presentation standards, ensure compliance, and create memorable guest experiences.
Prepare and manage team rosters, monitor labour costs and payroll, and adjust staffing levels in line with business demands to ensure efficient daily operations.
Conduct regular stocktakes, monitor beverage quality, manage inventory and ordering, and actively control stock levels and wastage to maximise profitability.
Respond promptly to guest feedback, personally resolving service issues and supporting the team to deliver positive outcomes in line with company standards.
Drive beverage sales by engaging with guests, coaching and training the service and bar team on product knowledge and upselling techniques, and delivering promotions, events and seasonal beverage initiatives.
Manage inventory, conduct regular audits and work with the culinary team and restaurant leaders to maximise revenue.
Maintain a safe and compliant workplace by completing regular operational checks, ensuring adherence to workplace health and safety requirements, liquor licensing legislation, and company policies.
Review daily trading performance, monitor key financial and operational metrics, identify improvement opportunities, and implement practical solutions to enhance service and profitability.
Recruit, onboard, train and coach bar team members through regular floor-based leadership, providing ongoing feedback, performance management and development to build a confident, high-performing team.
Lead by example to create a positive and collaborative team culture, recognising achievements, encouraging career development, and fostering open communication and teamwork across every shift.
What you can expect from us
Salary of AUD $80,000 to $85,000 gross per annum
