Requirements
  • Interprovincial Red Seal certification or equivalent.
  • At least three years of culinary management experience.
  • Thorough background in quick-serve and restaurant service.
  • Strong interpersonal and communication skills.
  • Financial management skills, including the ability to understand budgets, forecasting, and scheduling.
  • Strong multitasking and adaptability to changing deadlines and priorities.
  • Intermediate to advanced knowledge of Microsoft Office and familiarity with point-of-sale systems.
  • Ability to lift and carry up to 50 pounds occasionally and climb a step ladder or step stool.
  • Ability to work evenings, weekends, holidays, and other required shifts.
Responsibilities
  • Manage the day-to-day operation of the Cliffhouse Restaurant & Bar and Loggers’ Grill kitchens.
  • Handle special menu requests, events, and tour groups in collaboration with the Food and Beverage Outlets Managers.
  • Manage the kitchen team in compliance with HACCP, work-safety regulations, established standards, and budgetary objectives.
  • Ensure consistent food preparation and high-quality food presentation.
  • Inspect seasonings, doneness, portion control, and food presentation to maintain product consistency.
  • Identify opportunities to increase food revenue, reduce kitchen expenses, and maximize departmental productivity without compromising guest satisfaction.
  • Raise departmental standards and introduce new concepts.
  • Maintain and develop menus and implement seasonal changes with the Director of Food & Beverage Operations and Food & Beverage Outlets Managers.
  • Oversee food deliveries, verifying quantities and specifications and ensuring receipt and storage according to HACCP guidelines.
  • Maintain professional and friendly business relationships with vendors.
  • Follow reasonable business directives from the Food & Beverage leadership and management team.
  • Comply with Capilano Group standards for inventory and waste management.
  • Conduct ongoing work-safety and HACCP training, communicate health and safety requirements to team members, and ensure compliance across the venues.
  • Maintain HACCP data logging and record keeping.
  • Maintain kitchen cleanliness and tidiness through daily checklists and facility inspections.
  • Manage the kitchen team through daily briefings and check-ins, providing feedback and setting goals.
  • Support kitchen team-member development through job-specific and technical-skills training.
  • Plan and implement strategies to continually improve team-member and guest experiences.
  • Foster a safe, inclusive, supportive, and respectful environment for team members.
  • Take reasonable precautions to protect team members and guests.
  • Perform other assigned duties.
