Responsibilities
  • Ensure the efficient and profitable functioning of the assigned kitchen.
  • Apply ibis Mumbai Airport food production and kitchen cleanliness standards.
  • Maintain team hygiene standards in accordance with set standards.
  • Support the Sous Chef in all phases of kitchen operations.
  • Ensure procedures are followed and clear records are maintained.
  • Escalate matters that may affect Accor's interests to Management.
  • Oversee Food and Beverage Service or another hotel department when required by circumstances and directed by the General Manager.
  • Plan and coordinate team activities to ensure operational effectiveness.
  • Maintain par stock levels by calculating inventory, ordering, and retrieving supplies.
  • Contribute to objectives within the Food and Beverage Production department.
  • Manage the team to ensure proper equipment use and efficient task completion.
  • Monitor team grooming and personal hygiene.
  • Ensure the team is trained in all safety provisions.
  • Analyze food costs and determine cost-effective recipes while maintaining standards.
  • Identify cost-effective resource use and educate the team accordingly.
  • Monitor operations to minimize food wastage.
  • Prepare dishes according to recipes and specified quantities.
  • Keep the assigned section clean and tidy according to standards.
  • Communicate with the Restaurant and Bar Manager regarding special functions, bookings, menu availability, service problems, guest comments, and guest preferences.
  • Prevent the use of contaminated products during food preparation.
  • Monitor food presentation for compliance with company standards and guidelines.
  • Provide Commis chefs with appropriate training and guidance.
  • Maintain stocks under optimum conditions and promptly communicate anticipated shortages to the Executive Chef.
  • Address day-to-day equipment and food-supply problems and needs.
  • Coordinate with department coordinators, supervisors, and departmental managers to ensure operational readiness, efficient resource utilization, and prompt service delivery.
  • Monitor food product quantity and quality for compliance with standards.
  • Follow all recipes, methods, and instructions from the Executive Chef.
  • Handle additional responsibilities delegated by Management.
  • Safeguard personal health and safety and the health and safety of others in the workplace.
  • Apply hotel security regulations, including fire procedures.
  • Apply ISO 9001 quality certification requirements relevant to the role.
  • Follow the hotel's environmental commitments, including energy saving, recycling, and waste sorting, and applicable ISO 14001 requirements.
  • Be ready and responsible for assignments given by Management.
