Requirements
  • Strong bar leadership experience, ideally at senior management level within a luxury hotel, destination bar, premium restaurant or high-quality lifestyle operation.
  • Excellent beverage knowledge, including cocktails, spirits and wine, with awareness of London's bar scene and broader industry developments.
  • Creative instinct combined with commercial awareness and experience managing revenue, gross profit, labour, stock, wastage, budgets and supplier relationships.
  • Ability to lead and develop others through clear coaching, role modeling and team development.
  • Comfort with point-of-sale, inventory and rota systems, plus understanding of UK licensing, food safety and bar operational discipline.
  • Ability to build relationships with hotel teams, senior leaders, ownership, suppliers and creative partners.
  • Cultural awareness, global perspective and flexibility to work evenings, weekends and late-night service periods.
Responsibilities
  • Lead the day-to-day operation of Rose Bar and set the tone for a polished, confident, warm and personable service experience.
  • Act as a senior member of the Food and Beverage leadership team and support the Director of Food and Beverage across the wider operation.
  • Shape and protect the Rose Bar identity across drinks, service, atmosphere and the guest journey.
  • Develop cocktail programmes and seasonal beverage menus that are creative, current and commercially sound.
  • Recruit, onboard and develop the opening team, building technical knowledge, confident service and a strong hospitality culture.
  • Lead beverage programming and training across Food and Beverage outlets, including Lana Lusa, Rose Bar, In-Room Dining and Private Dining Rooms.
  • Manage beverage purchasing, cellar organisation, stock control, wastage and supplier relationships.
  • Drive beverage revenue, average spend, gross profit and labour productivity across all outlets.
  • Own the Rose Bar guest journey from early evening through late-night service while maintaining energy, pace and standards.
  • Lead and support beverage experiences across Lana Lusa, Room Service and Private Dining Rooms, adapting the offer to each setting.
  • Lead tastings, supplier partnerships, brand activations and beverage innovation.
  • Support pre-opening stock, equipment, systems, standard operating procedures and training plans to ensure operational readiness.
  • Ensure compliance with licensing, food safety, health and safety, company policies and applicable legal and brand requirements.
  • Support Manager on Duty responsibilities and work across outlets when needed.
