Requirements
  • Strong restaurant leadership experience, ideally at senior management level within a luxury hotel, premium restaurant or high-quality lifestyle operation.
  • Strong commercial awareness and comfort managing revenue, labour, payroll, gross profit, budgets and operational performance.
  • Ability to lead and develop others through clear coaching, role modeling and team development.
  • Ability to balance a structured, results-driven approach with creativity and flexibility, remain calm when the pace changes and find solutions quickly.
  • Comfort using restaurant systems including point-of-sale, reservations, inventory and rota platforms, and using data in operational decision-making.
  • Ability to work confidently with Culinary, other hotel teams, senior leaders and ownership.
  • Flexibility to work evenings, weekends and key hospitality service periods.
Responsibilities
  • Lead the day-to-day operation of Lana Lusa across breakfast, lunch and dinner.
  • Act as a senior member of the Food and Beverage leadership team and support the Director of Food and Beverage across Rose Bar, Room Service and the Private Dining Rooms.
  • Own the Lana Lusa guest journey from arrival to farewell.
  • Lead and develop the restaurant team by setting expectations, coaching in the moment and creating a high-performing environment.
  • Recruit, onboard and train the opening team, embedding service standards, product knowledge and a hospitality culture.
  • Implement standard operating procedures, training plans and luxury service standards.
  • Partner with the Executive Chef on menus, service flow, pacing and the overall dining experience.
  • Coordinate service delivery with Rose Bar, Room Service and the Private Dining Rooms.
  • Drive commercial performance through revenue, average spend, labour productivity, payroll control and food and beverage gross profit.
  • Use guest feedback, reservations insight and operational data to identify opportunities, solve problems and continuously improve the experience.
  • Plan rotas and team deployment while balancing business levels, service standards, productivity and floor coverage.
  • Support VIP dining, private events, hotel activations and special moments across departments.
  • Monitor London's restaurant scene and bring forward ideas that keep Lana Lusa and Rose Bar relevant and connected to the neighbourhood.
  • Ensure compliance with food safety, Health and Safety, licensing, company policies and relevant legal and brand requirements.
  • Support Manager on Duty responsibilities and work across outlets when needed.

  • Previous pre-opening experience, including building an operation from the ground up and preparing for a confident opening.
