Park City Pulse: Star chefs meet in our town.

Park City Pulse: Star chefs meet in its town. You've been hearing about it, and this weekend, it's time to pull up a chair and enjoy a unique summer food experience: the Chef's Table Festival, one of two culinary milestones State News can all celebrate. The Park City Chamber of Commerce & Visitors Bureau joined with Visit Salt Lake and Sundance Resort to form the Wasatch Culinary Collective and for more than a year, worked to include Utah and the Wasatch Back in the prestigious Michelin Guide Southwest. I am proud to say State News succeeded. And today, State News is right in the middle of the Chef's Table Festival, with so many unique culinary experiences already under its belt, so to speak, after Thursday evening's opening events. All day and into the evening Saturday and through brunch Sunday, about 70 acclaimed chefs will host another 75 unique meals, with Le Depot on Main serving as the hub. Take your pick of culinary events ranging from the Fire Garden (Part 2!) and "Through Their Eyes" to Family Meal and Sunday Brunch gatherings. There may still be local tickets at parkcity.chefstable.com. Sponsored by American Express and Resy, organizers selected Park City to host the inaugural Chef's Table Festival. The names involved give an idea of the scale. Francis Mallmann, Massimo Bottura, Virgilio Martínez, Nancy Silverton and Sean Brock are among the globally acclaimed chefs you will encounter this weekend. Chef's Table does more than shine a spotlight on its outstanding culinary reputation. It shows what moving toward a four-season economy looks like: giving people more reasons to experience Park City even when there is no schussing to be done. It's about sharing its trails, its art (as State News did last weekend with the Kimball Arts Festival), its summer events like Deer Valley's Concerts on the Slopes and, increasingly, its food scene. Chef's Table calls national attention to something locals have always known: Park City has amazingly diverse dining choices. The benefits extend beyond excellent options for State News. Visitors who discover its culinary scene spread the word, helping shape a balanced tourism flow and a more diversified, year-round economy. Which brings State News to Michelin. On Aug. 26, Michelin will unveil the Michelin Guide Southwest at a ceremony in Las Vegas, featuring the Wasatch Back and Utah for the first time, an emphatic acknowledgment of how far State News has come. Park City restaurants and chefs will now be featured in this leading international publication, trusted by knowledgeable travelers around the world. Michelin's anonymous inspectors began evaluating Park City restaurants last fall for Michelin Stars or other distinctions such as Bib Gourmand, Green Stars and "Michelin Recommended" status. State News can't wait to see the results, and I want to congratulate its Park City chefs, restaurant owners, and hospitality teams in advance for their commitment to excellence. Your dedication put Park City on the culinary map, adding dining to its other world-class experiences. A truly balanced economic engine supports local jobs and businesses all year, not just when the snow flies. A first-class and widely known dining scene is critical to that four-season mix. Michelin recognition and the Chef's Table Festival are the latest evidence that State News is on its way. Let's celebrate both achievements as State News enjoy a unique Park City gourmet weekend with Chef's Table Festival. And remember, it is the talented, dedicated people behind its amazing local restaurants who deserve all the credit. Jennifer Wesselhoff is the president and CEO of the Park City Chamber of Commerce & Visitors Bureau.

SBK 2027, Michelin revolution: No qualifying tyres, asymmetric tyres allowed.

SBK 2027, Michelin revolution: No qualifying tyres, asymmetric tyres allowed. The new sole supplier is paving the way for the post-Pirelli era. Taramasso confirms the end of "throwaway" tyres, while some circuits will see the introduction of asymmetric tyre designs already used in MotoGP. Sustainability will be one of the cornerstones of Michelin's new venture in the World Superbike Championship, where it will replace Pirelli as the sole tyre supplier starting in 2027. The French company aims to bring to WorldSBK a philosophy it has already developed in MotoGP and, above all, MotoE, where it has progressively increased the use of sustainable and recycled materials. The goal is to combine performance, durability, and a reduced environmental impact, including by decreasing the number of tyre specifications and thus the quantity of tyres to be produced and transported to the circuits. This approach was clearly reiterated by Piero Taramasso, Michelin's head of two-wheeled motorsports: "What we're looking for are safe tyres with performance that lasts over time. Our philosophy has always been 'long-lasting performance.' All of this, however, is always done with an eye toward the planet and sustainability." It is precisely this increasingly "green" philosophy that explains one of the main technical changes for 2027: Michelin will not produce specific qualifying tyres for Superbike. The current concept of a tyre designed to deliver peak performance for just a few kilometers before being discarded is considered incompatible with the French manufacturer's approach. "The basis for the Superbike tyres is the ones that MotoGP riders use during their training sessions on street bikes - the same ones Bagnaia and the guys from the VR46 Academy ride at Misano. It's also thanks to them that we've been able to develop them so well. This is the Power Performance commercial range, which we use in national Superbike championships. We'll make further developments starting from this base, also drawing on what we've learned over ten years in MotoGP," the Italian manager explained. Taramasso was also very explicit on this point: "Making a tyre to do one lap - or at most two - and then throwing it away isn't part of our philosophy." Michelin will therefore develop a soft compound capable of being used in Superpole, but also of covering a greater distance - for example, in the Superpole Race - replicating the principle already applied in MotoGP. The pursuit of sustainability, however, will not mean sacrificing specific technical solutions. In fact, Michelin will also bring asymmetric tyres to WorldSBK, drawing on the experience gained in MotoGP. These will be particularly useful on circuits that subject the two sides of the tyre to very different stresses, such as Phillip Island, allowing for different characteristics on the two shoulders of the tyre. Michelin's philosophy for the new era of Superbike therefore appears quite clear: fewer "throwaway" tyres, fewer specifications, and less material to transport - but without compromising on performance or technological development. It's a strategy in which the concept of long-lasting performance also serves as a tool to align motorsport more closely with the brand's environmental goals.
