Requirements
  • Degree in Hotel Management or related discipline
  • Minimum 10 to 12 years of progressive F&B leadership experience in a luxury hotel or high-end restaurant group, with at least 3–5 years as multi-outlet head
  • Proven track record of conceptualizing and launching signature restaurants/bars
  • Familiarity with Accor systems, standards, and brand programs preferred
Responsibilities
  • Lead the overall operations of all restaurants, lounges, and bars ensuring alignment with Accor Luxury Brand Standards
  • Develop and implement outlet-specific business plans to achieve hotel revenue and profitability targets
  • Partner with Culinary, Sales, Marketing - Food & Beverage to drive concept innovation, guest experiences, and promotional activities
  • Anticipate industry trends and translate them into actionable initiatives at Fairmont Mumbai
  • Collaborate closely with the City Food & Beverage collaborators and F&B promoters to implement targeted business plans across all restaurants and bars
  • Partner with specialized F&B agencies to design and execute innovative concepts that enhance guest experiences and market positioning
  • Ensure consistent service excellence across all outlets in line with LQA standards
  • Monitor and analyze guest feedback on TrustYou, quality audits, and market performance to enhance offerings
  • Maintain compliance with FSSAI, excise, and other regulatory requirements for food and beverage operations
  • Champion sustainability initiatives aligned with Accor Planet 21
  • Prepare and manage budgets for all restaurants and bars with focus on revenue optimization and cost control
  • Conduct regular P&L reviews and implement corrective actions where necessary
  • Drive upselling initiatives, partnerships, and marketing campaigns to grow top-line revenue
  • Inspire, mentor, and develop a strong leadership team including Restaurant Managers, Bar Managers, Sommeliers, Mixologists, and service colleagues
  • Foster a culture of engagement, inclusivity, and growth in line with Accor Heartist values
  • Implement training programs on service standards, guest engagement, and product knowledge
  • Identify and nurture talent for succession planning within the F&B department
  • Maintain the identity, positioning, and storytelling of each restaurant and bar within the property
  • Collaborate with Accor’s global culinary and beverage teams to bring signature experiences to Fairmont Mumbai
  • Ensure brand partnerships, supplier relationships, and guest experiences reflect the Fairmont luxury ethos
  • Oversee hygiene, food safety, and occupational health standards across all outlets
  • Ensure responsible service of alcohol and adherence to local liquor licensing laws
  • Lead emergency and risk management protocols related to restaurants and bars
  • Guest satisfaction scores (LQA, TrustYou)
  • Revenue growth and profitability of restaurants and bars
  • Employee engagement and retention scores
  • Compliance with Fairmont brand standards and audit results
