Requirements
  • Previous leadership experience.

  • Knowledge of and ability to operate within outlet and hotel liquor licensing guidelines and House Management Policies.
  • Knowledge of food-handling and presentation hygiene standards prescribed by council and legislative regulations.
Responsibilities
  • Attend and actively participate in weekly Head of Department meetings while maintaining confidentiality.
  • Manage food and beverage service across the restaurant, bar, room service, conferencing, and outside catering areas.
  • Ensure cleaning and maintenance of outlets, work areas, tableware, utensils, materials, and equipment.
  • Liaise with Maintenance to ensure requests are completed quickly with guest needs prioritized.
  • Coordinate with Sales, Food and Beverage, Kitchen, Housekeeping, and Front Office to prepare for conferences.
  • Assist with monthly restaurant, bar, and conference reports, including commentary on key performance indicators and corrective actions.
  • Manage and guide outlet staff, including Food and Beverage Supervisors.
  • Prepare weekly and monthly forecasts for restaurant, bar, room service, and conference areas.
  • Follow emergency communication procedures and ensure media inquiries are handled only by the nominated spokesperson.
  • Induct new staff into the team, department, and hotel during their first week.
  • Ensure staff perform their duties according to brand and service standards and procedure manuals.
  • Communicate openly with staff and conduct regular briefings.
  • Implement staffing strategies and practices to achieve financial and service-quality targets.
  • Build a collaborative team that takes responsibility for departmental and hotel goals.
  • Implement Accor training initiatives, including coordinated on-the-job training aligned with service standards and procedures.
  • Develop and implement strategies with Shift Leaders to minimize staff turnover.
  • Appraise staff performance using the Accor performance review system, conduct probationary and annual reviews, and address performance issues.
  • Ensure staff presentation complies with the hotel staff handbook, including uniform and name-badge standards.
  • Conduct regular briefings, debriefings, and departmental meetings and encourage transparent interdepartmental communication.
  • Recruit technically skilled staff or staff with training potential and a customer-focused service orientation.
  • Manage directly supervised staff in accordance with the relevant award.
  • Ensure the employee department induction program is completed within four weeks.
  • Attend required workplace health and safety training.
  • Report health and safety hazards, incidents, and injuries and complete required documentation.
  • Participate in risk assessments when requested.
  • Support the hotel rehabilitation program as required.
  • Operate duty-management shifts according to the duty manager rota and business needs.
  • Manage the daily operation of the restaurant and bar, direct the Food and Beverage team, and ensure customer satisfaction.
  • Manage food and beverage costs, uphold menu standards, and control inventory.
