Requirements
  • Previous computer experience, including Microsoft Word, Microsoft Excel, and Microsoft Outlook.
  • Previous administrative work experience with strong organizational and prioritization skills.
  • Strong business communication skills, including composing faxes and letters.
  • Ability to work effectively unsupervised and meet deadlines.
  • Legal eligibility to work in the United States.
Responsibilities
  • Manage emails, tasks, and calendars for the Executive Chef and Director of Food & Beverage.
  • Print, update, and post information needed for the chef’s communication board on a daily, weekly, and monthly basis.
  • Complete and ensure the accuracy of time and attendance records for the culinary division to meet payroll timelines.
  • Enter appropriate information into the food costing tracker sheet daily so the Executive Chef has accurate, up-to-date food cost information.
  • Join engineering and stewarding walks with the Chef and team, record identified action items, and update punch lists.
  • Send updated punch lists to the engineering and stewarding departments by the following day’s end or earlier, and save a copy of each week’s punch list.
  • Collect or follow up on EcoSure temperature records from all kitchens every Tuesday and file the weekly logs in the chef’s office binder.
  • Assist with the BirchStreet recipe catalogue by entering recipes into the BirchStreet recipe platform and linking all ingredients to inventory products with accurate pricing for recipe food-cost calculations.
  • Proactively complete culinary projects assigned by the Executive Chef or Executive Sous Chef within the given time frames.
  • Assist with development and growth plans by coordinating completion of employee performance reviews.
  • Assist leaders with recruitment and departure items.
  • Create PowerPoint presentations for departmental meetings and schedule departmental activities.
  • Contribute to the daily growth of the operation through awareness and understanding of LQA, EES, Forbes, EcoSure, and Fairmont Grand Del Mar standards.
  • Work with the Executive Chef, Food & Beverage Director, and Outlet Chef on promotions, menus, and special events.
  • Complete other food and beverage projects as defined.
Desired Qualifications
  • Operational experience with BirchStreet.
  • Previous payroll administration experience.
  • Previous experience in a food and beverage environment and a strong understanding of the demands of a large-quantity kitchen environment.
  • Post-secondary education in Hospitality Management.
  • A calm demeanor and professional approach.
