Requirements
  • Proven experience as a Sushi Chef in a fast-paced environment.
  • Strong knowledge of sushi preparation, food safety, and hygiene standards, including HACCP.
  • Experience supporting or supervising teams; multi-site experience is advantageous.
  • Strong communication and interpersonal skills with a supportive leadership style.
  • Ability to work independently and manage priorities across multiple locations.
  • Flexibility and willingness to travel daily within the assigned region.
  • Reliable transportation for early-morning commuting and daily travel between kiosks.
  • Ability to prepare fresh ingredients by hand, including meat and raw fish products.
  • Ability to label products accurately in compliance with food safety and allergen requirements.
  • Experience placing weekly orders, rotating stock daily, and producing monthly stock takes.
  • Ability to work early shifts, including starts at 6 a.m.
  • Ability to maintain food and health and safety compliance and meet Environmental Health Officer expectations.
Responsibilities
  • Provide daily support to Sushi Gourmet kiosks on-site and remotely.
  • Guide, coach, and encourage kiosk colleagues to improve performance and engagement.
  • Ensure consistent sushi quality, presentation, food safety, and hygiene standards across kiosks.
  • Conduct occasional kiosk audits for compliance with company standards and procedures.
  • Finalize and support ordering processes for kiosks in the assigned area.
  • Review and validate submissions on the company compliance platform.
  • Assist with onboarding and training new team members.
  • Support new kiosk openings and operational rollouts.
  • Be accountable for the kiosk and team while maintaining audit standards for food and health and safety compliance.
  • Ensure the team maintains cleanliness and food safety standards on site.
  • Plan ahead and manage kiosk operations across multiple locations.
  • Prepare fresh ingredients and products during each shift.
  • Maintain lawful product labeling and allergen compliance.
  • Complete daily stock rotation and monthly stock takes.
