Requirements
  • A minimum of 5 years of experience in an international chain, luxury hotel, or equivalent renowned bar.
  • Thorough knowledge of all levels of bar service operations.
  • In-depth international knowledge of beverages, cocktails, and other liqueurs.
  • Knowledge of Micros.
  • Excellent written and spoken French and preferably English.
  • Strong leadership and training ability, with motivation and a team-oriented approach.
  • High professionalism, creativity, business acumen, and management skills.
  • Strong management ability.
  • Ability to work under pressure, coordinate multiple activities simultaneously, and recommend appropriate solutions to bar-related problems.
Responsibilities
  • Control the operations of the food-and-beverage outlet Le Bar Long, including employee management and development.
  • Directly lead the work of bar assistants.
  • Brief deputies daily on hotel activities and other information necessary for effective bar operations, answer staff questions, and take collective action to resolve issues.
  • Ensure proper use of products, equipment, and supplies to prevent waste and unsafe use.
  • Report best- and worst-selling items to management and suggest profitable menu changes.
  • Participate in creating the menu.
  • Promote products and animate the bar to build customer loyalty.
  • Manage cellar and storeroom orders, as well as linen orders and returns for the service.
  • Be present in daily operations to ensure standards are followed.
  • Implement and monitor accounting procedures.
  • Prepare and control the bar budget and manage operating expenses.
  • Submit reports to optimize sales and minimize labor, beverage, and food costs.
  • Analyze the bar's financial information and prepare variance-justification reports.
  • Participate in daily food-and-beverage meetings and brief staff on important points.
  • Encourage teams to perform add-on sales.
  • Know all hotel services well enough to answer guests and prioritize recommendations for the hotel's restaurants.
  • Control, monitor, and supervise bar employees, including work assignments, performance evaluations, training plans, and problem resolution.
  • Ensure a safe environment for guests and employees to reduce the risk of damage and accidents.
  • Maintain a high level of bar service by responding effectively to complaints and taking appropriate action with dissatisfied guests.
  • Prepare and verify attendance sheets and complimentary vouchers requested by management.
  • Attend the monthly food-and-beverage meeting to discuss operational issues and the financial report for the service and department.
  • Create service information sheets for regular guests.
  • Establish a sales plan to encourage and reward the best employee.
  • Maintain, control, and regularly inventory bar equipment.
  • Monitor staff daily regarding attitude and professionalism.
  • Continuously improve the quality of bar services to exceed external competitors.
  • Establish a precise cleaning plan for the service and equipment and ensure hygiene standards are followed.
  • Supervise cleaning of the spaces and premises by conducting inspections with the stewarding, housekeeping, and engineering department managers.
  • Maintain opening and closing procedures for the establishment.
