  • At least three to five years of culinary kitchen management or supervisory experience managing shifts or stations with at least two full-time employees.
  • Prior restaurant kitchen or culinary technical ability.
  • A high school diploma or equivalent.
  • ServSafe certification.
  • Ability to perform standing, lifting, bending, learning, reading, concentrating, thinking, and communicating activities.

Responsibilities
  • Manage and lead the daily culinary operations for the hotel restaurant and food and beverage operations.
  • Oversee all kitchen functions to ensure food quality, consistency, and innovation align with property brand standards and financial objectives.
  • Provide strategic leadership and creative direction for the hotel’s culinary operations.
  • Develop menus, manage food and labor costs, and mentor the culinary team.
  • Work with the leadership team to develop and execute the hotel and restaurant culinary vision and menu strategies across all outlets.
  • Lead menu design, recipe development, and presentation standards in alignment with brand identity.
  • Ensure the quality of ingredients, preparation, and food plating.
  • Control labor and operating expenses through planning, budgeting, purchasing decisions, and inventory control while developing cost-control and revenue-generation solutions.
  • Develop menus for restaurant and catering operations and create recipes, photos, and plating guides for menu items.
  • Coordinate with Food and Beverage and Marketing teams on promotions, special events, and seasonal offerings.
  • Coordinate the selection, training, coaching, development, motivation, and evaluation of kitchen employees.
  • Maintain compliance with departmental policies, service procedures, and standards.
  • Use and maintain equipment properly and only as intended.
  • Participate in local and national media and public relations culinary events as an ambassador for the restaurant and hotel.
  • Conduct daily line checks, food reviews, and recipes of the day, and provide feedback to the kitchen team, food service staff, and management.
  • Schedule and monitor daily line-up meetings.
  • Maintain positive guest and associate relations, anticipate needs, and resolve issues promptly.
  • Monitor and maintain cleanliness, sanitation, and organization of assigned work areas.
  • Operate and produce daily for the outlet under HACCP and ServSafe guidelines.
  • Maintain inventory control, portioning accuracy, and waste-reduction initiatives.
  • Conduct outlet-specific training for culinary staff.
  • Complete and submit necessary reports and attend meetings and training opportunities.
  • Prepare weekly schedules according to forecasts.
  • Coordinate kitchen opening and closing procedures.
  • Perform other duties as assigned.
