Requirements
  • Ability to prioritize workload.

  • Solid proficiency in English, including reading, writing, and speaking.
  • Minimum five years of restaurant management experience at a department-head level.
  • Ability to work evening, weekend, and late-night shift rotations.
  • Legal eligibility to work in the United States.
Responsibilities
  • Manage all food and beverage outlets, banquet and bar operations, and colleagues on a daily basis, including Amaya Restaurant, Lobby Bar, in-room dining, Pool, Cent’Anni, Clubhouse Grill, and banquet functions.
  • Direct and work with the food and beverage and culinary management teams and colleagues to execute operations successfully, improve guest and employee satisfaction, and maximize financial performance.
  • Lay out goals and develop strategies to accomplish those goals.
  • Forecast and schedule using hotel tools and guidelines.
  • Oversee initial and ongoing training for new and current food and beverage service employees, including regular training classes for management and hourly staff.
  • Control standards, performance, employee conduct, dress code, appearance, and sanitation according to established policies.
  • Formulate and recommend changes to improve employee performance and teamwork.
  • Review colleague and department-manager performance through structured catch-up meetings and annual performance reviews.
  • Develop analyses and implement merchandising aligned with the property's profile and guest patronage.
  • Manage and control outlet expenses, with a focus on increasing revenue and profit.
  • Train colleagues on menu items, preparation methods, ingredients, and the beverage program.
  • Work with the Chef and Sous-Chefs to ensure product quality and guest satisfaction.
  • Participate in and schedule department food and beverage meetings.
  • Coordinate key hotel events and keep departments informed about special events such as Christmas, New Year's, Thanksgiving, and Easter.
  • Review departmental manager log emails and the daily logbook.
  • Manage waste and support Planet 21 project initiatives.
  • Ensure managers maintain inventories and par stocks.
  • Ensure all equipment is maintained in proper working condition and report deficiencies to the appropriate department.
  • Manage beverage stock and develop and maintain wine and cocktail lists.
  • Use Profit and Loss statements and calculate and control food and beverage costs.
  • Manage budgets and control expenses.
  • Perform human-resources activities including interviewing, evaluating, disciplining, and terminating employees.
  • Handle food and beverage guest complaints and improve area utilization, appearance, service quality, performance, and service techniques.
  • Maintain current prices and approved purveyors for food and beverage requisitioning, inventory, cost control, and forecasting.
  • Assist managers with training their staff.
  • Develop and analyze procedures and special promotions to improve guest patronage under hotel policies.
  • Develop and maintain effective communication between operating departments.
  • Complete accident reports accurately and promptly.
  • Communicate regularly with upper management.
  • Respond properly to hotel emergencies and safety situations.
  • Direct teams and ensure standards and service sequences are followed.
  • Assist across the food and beverage department during busy periods and support leaders and colleagues.
  • Manage guest expectations and resolve issues to secure guest satisfaction.
  • Perform other tasks or projects assigned by hotel management and executive staff.

  • College degree, preferably in hotel/restaurant management or business administration.
