Requirements
  • At least 2 years of significant experience in a restaurant serving Japanese cuisine.
  • Experience in gastronomic cuisine is required.
  • Fluent English and French.
  • Ability to work with Japanese culinary culture and standards.
  • Ability to manage Teppanyaki and Washoku culinary techniques, including fish cutting, rice cooking, and tempura preparation.
  • Knowledge of HACCP hygiene standards.
  • Recognized leadership, autonomy, creativity, rigor, method, management ability, teaching ability, customer orientation, and professional presentation.
Responsibilities
  • Ensure the freshness of products and the quality of dish preparation and presentation.
  • Ensure customer satisfaction.
  • Help develop menus and kitchen menus and propose improvements.
  • Take responsibility for a kitchen section and ensure its organization, coordination, and service.
  • Organize and manage the culinary production process according to Japanese cuisine standards.
  • Follow recipes and the restaurant's gastronomic identity.
  • Provide high-quality service in front of customers.
  • Control the proper use of equipment and Teppanyaki and Washoku techniques.
  • Organize workstations and ensure precise, aesthetically presented plating.
  • Apply hygiene and safety standards.
  • Deliver a refined culinary show in front of customers and create a unique, memorable customer relationship.
  • Select products and guarantee their quality.
  • Supervise expenses related to kitchen operations.
  • Manage food costs and monitor ratios.
  • Manage stock for the assigned section, including fresh products, fish, rice, and sauces.
  • Train and supervise staff.
  • Distribute tasks within the kitchen brigade.
  • Transmit Japanese culinary know-how.
