Requirements
  • Three to five years of experience in the hospitality industry.
  • Outstanding written and verbal communication skills.
  • The ability to communicate and interact effectively with all levels of an organization.
  • Proven organizational skills, the ability to work independently, and the ability to set and meet deadlines while delivering quality results.
  • Applicable job-related skills associated with the accountable duties.
  • The ability to undertake different tasks from time to time to meet the needs of guests and colleagues.
  • Compliance with the Health and Safety at Work Act 1974, the company health and safety manual, Food Acts, hotel procedures, and fire, health, and safety rules.
  • Attendance at required statutory fire training and other training deemed appropriate by the Head of Department.
  • Use of appropriate protective clothing and reporting of workplace hazards, equipment defects, and accidents according to hotel procedures.
Responsibilities
  • Assist the Head Chef in the smooth running of the Colleague Restaurant kitchen and maintain all kitchen areas to Fairmont standards.
  • Supervise and coordinate kitchen service with other departments.
  • Handle staff queries and resolve problems concerning the kitchen or staff canteen.
  • Coordinate and deliver training for kitchen staff.
  • Cook food daily according to business requirements.
  • Coordinate functions and activities with Food and Beverage and Back of House departments.
  • Handle payroll and holiday organization.
  • Assist the Head Chef with production and presentation quality.
  • Support cost control and implement standards.
  • Assist with personnel-related matters.
  • Deputise for the Head Chef during their absence.
  • Control all aspects of food outlets during the Head Chef’s absence.
  • Manage health and hygiene matters.
  • Promote food quality throughout the hotel.
  • Ensure room service meets required standards for quality, temperature, and service.
  • Ensure varied, interesting, well-cooked, and balanced canteen cuisine for colleagues.
  • Ensure smooth day-to-day kitchen operations.
  • Carry out annual appraisals for team members.
  • Conduct departmental orientation for new team members.
  • Liaise with the Training and Quality Assurance Manager regarding departmental training needs.
  • Carry out other reasonable requests as directed by the manager.
  • Report building, plant, or equipment defects according to hotel procedures.
  • Ensure accidents involving colleagues, guests, or visitors are reported according to hotel procedures.
  • Attend required fire training and comply with fire, health, and safety rules.
