Requirements
  • A high school diploma or equivalent vocational training certificate is required; some college is preferred.
  • The candidate must be at least 18 years old to serve alcoholic beverages.
  • Five years of experience as a Food and Beverage Supervisor is required.
  • Knowledge of various food service styles is required.
  • Fluency in English, both verbal and non-verbal, is required.
  • The candidate must provide legible communication and perform basic arithmetic.
  • The candidate must perform job functions with attention to detail, speed, and accuracy; prioritize and organize; remain calm and resolve problems using good judgment; follow directions thoroughly; understand guests' service needs; work cohesively with co-workers; work with minimal supervision; and maintain confidentiality of guest information and pertinent hotel data.
  • The candidate must be able to ascertain departmental training needs and provide training, direct staff performance, and follow up with corrections when needed.
  • The candidate must be able to transport In Room Dining tables and Mini-Bar Carts weighing 30 to 50 pounds within the hotel, endure various physical movements, reach 1 to 2 feet, remain stationary for 1 to 3 hours during the work shift, and communicate satisfactorily with guests, management, and co-workers.
  • Successful candidates must be legally eligible to work in the United States.
Responsibilities
  • Maintain knowledge of and comply with departmental policies, service procedures, and standards.
  • Maintain knowledge of the correct maintenance and use of equipment and use equipment only as intended.
  • Anticipate guests' needs, respond promptly, and acknowledge all guests regardless of workload or time of day.
  • Maintain positive guest relations and resolve guest complaints to ensure guest satisfaction.
  • Maintain knowledge of hotel services, features, local attractions, and activities to respond accurately to guest inquiries.
  • Monitor and maintain cleanliness, sanitation, and organization of assigned work areas.
  • Maintain knowledge of available liquor, beer, non-alcoholic, wine, champagne, glassware, garnishes, menu items, preparation methods, ingredients, sauces, portions, presentation, prices, specials, unavailable items, guest-room layouts, manual procedures, house counts, arrivals and departures, VIPs, and in-house group activities.
  • Comply with state liquor regulations, including restrictions on service to minors and intoxicated persons and drunk driving.
  • Check storage areas for supplies, organization, and cleanliness, and instruct designated personnel to correct deficiencies.
  • Establish par levels, complete requisitions, and replenish supplies and equipment.
  • Requisition linens and skirting and assign staff to transport them for In Room Dining.
  • Meet with the Chef to review daily specials and unavailable items, update the board, and ensure staff are informed of changes.
  • Review house-count and arrival updates with the Front Desk.
  • Review prior-day sales, resolve discrepancies with Accounting, and track revenue against budget.
  • Prepare and adjust weekly work schedules according to staffing guidelines, labor forecasts, and business demands.
  • Ensure staff report as scheduled and document late or absent employees.
  • Coordinate staff breaks and assign work and side duties according to departmental procedures.
  • Conduct pre-shift meetings and review information relevant to the day's business.
  • Inspect staff grooming and attire and correct deficiencies.
  • Ensure materials and equipment are ready for service and correct deficiencies with the responsible personnel.
  • Monitor staff performance throughout service and job functions, enforce departmental standards, and correct deficiencies.
  • Promote personalized, courteous, and efficient service.
  • Inspect table setups for cleanliness, neatness, order accuracy, and compliance with departmental standards.
  • Check order status and ensure orders are delivered within designated timelines.
  • Assist In Room Dining staff with their functions and assist with taking guest orders as necessary.
  • Answer the In Room Dining phone within three rings using correct salutations and telephone etiquette.
  • Ensure tables and trays are removed from guest rooms and corridors and returned to In Room Dining according to procedures.
  • Monitor and direct pickup and organization of doorknob menus and ensure delivery times are met.
  • Organize, coordinate, and direct staff in setting up, servicing, and breaking down hospitality functions.
  • Check hospitality-suite setups, resolve problems, and ensure replenishment according to function orders and client requests.
  • Organize, coordinate, and direct staff in setting up, delivering, and retrieving amenities.
  • Schedule colleagues to match forecasted covers and expected business and provide service during printed operating hours.
  • Ensure staff complete closing duties before signing out.
  • Provide performance feedback, handle disciplinary problems, counsel colleagues, maintain attendance and disciplinary records, and conduct timely performance reviews.
  • Foster a cooperative working climate that maximizes productivity and colleague morale.
  • Respond promptly to pages by beeper or radio.
  • Complete maintenance work orders, submit them to Royal Service, and contact Engineering for urgent repairs.
  • Document pertinent information in the department log book.
  • Complete paperwork and closing duties according to departmental standards.
  • Review assignment status and follow-up actions with incoming staff.
