Requirements
  • Diploma or degree in vocational hospitality
  • 1-2 years experience in 4-5 star Hotel
  • Food & Beverage Production Operational Standards, Policy & Procedure Adherence
  • Full compliance with HACCP standards and certification
  • Available to join immediately
Responsibilities
  • prepare their own inventory list for their station
  • ability to fill in for another chef when absent from another station
  • ensure standard recipes and plating guides followed at all times in her/his outlet
  • provide Executive Sous Chef with daily market list and control goods received to guarantee quality and quantity
  • provide recipes and costing as per requirement
  • assist and propose special Food Promotions, Events and other Food related activities for outlet
  • interacts with Outlet Supervisors on daily basis and ensures all food items sent to Outlets are well explained
  • control food wastage without compromising on food quality
  • recommend changes in systems and procedures to increase efficiency and improve service levels
  • maintain records/documentation in area as per operational control requirements
  • maintain intradepartmental communication via log books and memoranda
  • perform as per Operational Standards
  • proper grooming at all times
  • attend training classes as per schedule
  • show fullest cooperation and respect within the team and other departments
  • be aware of daily activities and product knowledge of hotel facilities
  • after set-up of buffets check quantity/quality and presence of food-labels
  • attend communication meetings of department
  • check end-of-shift that equipment is working, clean, in appropriate place and nothing hazardous
  • communicate information for next shift or supervisor
  • share skill/knowledge with all employees
  • apply HACCP as per Hotel Standard
  • help explain dishes and recommend specialties to guests
  • ensure buffets are refilled and food quality maintained
  • create atmosphere of tranquility amongst brigade
  • check standard/quality of food leaving kitchen
  • be punctual on duty and ensure employees are punctual
  • be well groomed to standards and ensure employees adhere
  • comply with hotel rules and regulations
  • promote employee morale and pride in department
  • promote professional customer service and cooperation
  • anticipate needs of customer to enhance service
  • cooperate with colleagues and assist in other areas as needed
  • familiar with Operational Standards Manual for field of responsibility
  • carry out other reasonable tasks as requested
  • execute any other duties as assigned
  • to be aware of company documentation and Operational Standards Manual
Desired Qualifications

  • Experience in 4-5 star Hotel
  • Knowledge of buffet setup and display
  • Leadership or supervisory experience
  • Food cost control experience
  • Menu engineering or planning experience
