Responsibilities
  • Provide direction, coaching, and leadership for all back-of-house employees, including food preparation and production, safety and sanitation, and company policies and procedures.
  • Hire, coach, and train kitchen staff to perform various assignments and handle equipment.
  • Train kitchen and concessions personnel in cleanliness and sanitation practices.
  • Ensure employee adherence to company policies and procedures in partnership with the human resources business partner.
  • Use all necessary tools to ensure quality food is prepared according to recipe specifications within company-approved ticket times.
  • Ensure food product freshness through proper purchasing and product rotation using the first-in, first-out method.
  • Check food storage and temperatures daily, record temperatures on the log sheet, and notify maintenance of issues.
  • Attend training for new menu items and train kitchen staff on proper preparation.
  • Communicate, implement, and follow up on changes to food products, kitchen systems, and procedures.
  • Check and maintain proper food holding and refrigeration temperature control points.
  • Roll out company initiatives and implement new menus.
  • Ensure daily opening, mid-shift, and closing operating duties are completed.
  • Maintain kitchen equipment by following manufacturer operating instructions, educating staff on proper use, maintaining equipment supplies, and contacting vendors for repairs as necessary.
  • Deliver an exceptional guest experience through execution of food and drinks.
  • Practice proactive guest management by following empowerment policy, recognizing opportunities before they occur, resolving issues, and leaving guests with a positive experience.
  • Assist managers and the General Manager with front-of-house duties as necessary.
  • Schedule kitchen staff weekly according to theater occupancy forecasts, movie schedules, and employee availability.
  • Execute private events to maximize sales and increase guest experience.
  • Control food cost and usage through proper product requisition, storage procedures, standard recipes, and waste control procedures.
  • Ensure successful delivery of daily and weekly budgets, goals, and objectives.
