Requirements
  • A preferred diploma in Hospitality Management or Food & Beverage.
  • A minimum of 5 years of relevant experience in a similar capacity.
  • Good reading, writing, and oral proficiency in English.
  • Working knowledge of Microsoft Excel, Word, and PowerPoint.
  • MAST and Food Handler’s Certification.
  • Strong interpersonal and training skills and good communication and customer contact skills.
  • The ability to work well in stressful and high-pressure situations.
  • The ability to work weekends, holidays, and shift work as scheduled.
  • The ability to stand and walk constantly throughout the shift.
  • The ability to frequently lift and carry up to 50 pounds.
  • The ability to constantly kneel, push, pull, and lift.
  • The ability to frequently ascend or descend ladders, stairs, and ramps.
Responsibilities
  • Supervise the day-to-day functions of restaurant employees, facilities, sales, and costs.
  • Control and analyze production quality, guest satisfaction, employee satisfaction, operating costs, sanitation, cleanliness, and hygiene across front- and back-of-house operations.
  • Establish and maintain effective employee relations.
  • Conduct candidate interviews, hire employees, provide orientation and training, and manage on-the-job performance, coaching, counseling, and suspension when necessary.
  • Attend and contribute to weekly food and beverage departmental meetings.
  • Conduct regular cleaning inspections to ensure compliance with health and hotel cleanliness standards.
  • Participate in restaurant service as necessary.
  • Ensure hotel grooming and appearance standards are met.
  • Control restaurant stock to ensure daily service requirements are met.
  • Ensure all staff adhere to health and safety procedures and policies, and follow up on staff health and safety requests.
  • Participate in preparing the food and beverage department budget and goals.
  • Complete administrative work including schedules, cleaning and maintenance logbooks, opening and closing duties, and cleaning checklists.
  • Track and compile monthly sales statistics, checklists, and reports to operate and maximize outlet profits.
  • Contribute to hotel committees and various events.
  • Maintain ALL Safe standards and ensure hygiene and prevention measures are followed.
  • Adhere to alcohol-handling procedures and policies and to all LQA standards for the department.
  • Motivate, supervise, and discipline team members as needed.
  • Recruit, interview, and onboard new employees.
  • Identify and develop high-potential team members.
  • Conduct regular performance reviews and provide ongoing feedback.
  • Monitor the appearance, professionalism, and attitude of team members.
  • Develop and maintain training programs aligned with business needs.
  • Create weekly schedules based on business levels and budget guidelines.
  • Prepare payroll and gratuity reports accurately and on time.
  • Lead monthly departmental meetings to share updates, gather feedback, and address operational concerns.
  • Maintain complete knowledge of food and beverage services, contents, preparation methods, outlets, and hotel services and features.
  • Follow hotel fire, life-safety, and emergency procedures.
  • Attend assigned briefings, meetings, and training sessions.
  • Report for duty on time wearing a clean and complete uniform.
  • Maintain a high standard of personal appearance and hygiene.
  • Respond professionally, politely, and efficiently to extraordinary guest requests and complaints.
  • Supervise daily venue operations to ensure seamless service and guest satisfaction.
  • Act as the point of contact for venue-related matters during shift coverage.
  • Maintain and uphold Fairmont and LQA standards while delivering a luxury experience.
  • Perform other reasonable duties assigned by hotel management.
Desired Qualifications
  • Additional food and beverage certification is advantageous.
  • The ability to speak other languages and a basic understanding of local languages are advantageous.
