Requirements
  • Ability to work all stations on the line.
  • Fluency in spoken and non-verbal English communication.
  • Ability to perform basic arithmetic, provide legible communication, and comprehend, expand, and condense recipes.
  • Ability to perform job functions with attention to detail, speed, and accuracy; prioritize and organize; remain calm and resolve problems using good judgment; follow directions; understand guest service needs; work cohesively with co-workers; work with minimal supervision; maintain confidentiality; and direct staff performance with corrective follow-up.
  • Previous supervisory experience.
  • Previous experience working with all products and food ingredients involved.
  • Ability to input and access information in the property management system, computers, and point-of-sale system.
  • Ability to transport 50 pounds and endure physical movements throughout work areas.
  • Ability to remain stationary for 4 to 6 hours during a work shift.
  • Ability to communicate satisfactorily with guests, management, and co-workers.
  • Five years of experience as a line cook at a quality hotel or restaurant.
  • Food handler certificate.
  • High school diploma or equivalent vocational training certificate.
  • Certification of culinary training or apprenticeship.
Responsibilities
  • Plan, prepare, set up, and provide quality service for menu items and specials in designated outlets according to standards and plating guide specifications.
  • Direct, train, and monitor the performance of line cooks.
  • Maintain organization, cleanliness, and sanitation of work areas and equipment.
  • Assist with inventories as scheduled.
  • Assist with plating banquet hot meals as assigned.
  • Follow the maintenance program and cleaning schedule.
  • Perform duties in other kitchen areas as assigned.
  • Work at off-premise functions.
  • Research new menu items.
  • Attend designated meetings and demonstrate leadership qualities.
  • Maintain the company image and vision statement.
  • Make optimal use of financial resources.
  • Participate in ongoing training and encourage the personal development of associates.
  • Continuously evaluate and improve operations.
