Requirements
  • Experience in Culinary Arts or related fields.
  • Certification through a Maryland State-approved sanitation program.
  • At least two years of supervisory experience in the health care industry.
  • Good management and communication skills.
Responsibilities
  • Plan, organize, and direct the delivery of nutrition and food services throughout the facility.
  • Follow oral and written instructions.
  • Perform arithmetic and unit-of-measurement conversions used in food preparation.
  • Work cooperatively with food service staff and other departments.
  • Ensure that sanitation schedules are followed, employee assignments are issued daily, and completion is verified to meet department infection-control policies.
  • Supervise the receiving and storage of food.
  • Supervise and assist with food preparation and service as needed.
  • Complete assigned Minimum Data Set sections in a timely manner according to facility protocol.
  • Document the dietary component of residents’ care plans according to facility protocol.
  • Ensure kitchen cleanliness.
  • Maintain proper storage of food and supplies.
  • Inform and educate residents about therapeutic diets.
  • Maintain records of resident profiles, meal census, menus, diet cardex, diet roster, diets served, and purchase records.
  • Prepare work and cleaning schedules.
  • Fill in when employees call out.
  • Maintain menus for the required retention period.
  • Plan food substitutions for residents who refuse or cannot eat the food served.
  • Follow facility safety policies and procedures.
  • Conduct Quality Improvement audits and projects.
  • Perform customer service satisfaction surveys.
  • Close the department using proper procedures, check locks and lights, and ensure equipment is turned off when necessary.
  • Seek staff input during decision-making.
  • Assess the quality of work performed by dietary aides, porters, and cooks.
  • Purchase or requisition food and supplies as directed by the Food Service Director.
  • Facilitate the monthly food committee.
  • Respond to customer complaints related to the food service department.
  • Keep the work area neat, hazard-free, and free of clutter, and notify the appropriate person or department when repairs are needed.
  • Ensure departmental policies and practices are followed.
  • Follow personal-protection and universal-precaution procedures.
  • Attend mandatory safety in-services and other required in-services.
  • Maintain confidentiality of patient and employee information.
  • Perform other relevant duties as assigned.
