- High school diploma or GED is preferred.
- Two to five years of cooking experience in long-term care or a similar setting is preferred.
- Ability to prepare, cook, portion, garnish, and serve food according to recipes and company standards.
- Ability to maintain sanitary conditions and orderliness of kitchen equipment, supplies, and utensils.
- Read menus to estimate food requirements and procure food from storage.
- Prepare and cook food in accordance with company standards and recipes.
- Measure and mix ingredients using kitchen utensils and equipment such as blenders, mixers, grinders, choppers, slicers, ovens, and cooktops.
- Bake, roast, steam, broil, and fry meats, fish, poultry, vegetables, and other foods.
- Add seasoning according to recipes and discuss necessary recipe adjustments with the supervisor.
- Test food by tasting, smelling, and taking temperatures to determine proper doneness.
- Carve meats, portion food into serving pans or onto serving plates, and add gravies, sauces, and garnishes.
- Wash, peel, cut, and shred vegetables and fruits as needed.
- Butcher chickens, fish, and meats as needed.
- Bake breads, rolls, and pastries as needed.
- Maintain sanitation and orderliness of equipment, supplies, and utensils in the work area.
- Coordinate work with other food-service employees to prevent waste and facilitate use of overproduction.
- Replenish food and other items and provide backup on the service line for dining-center customers.
- Select and develop recipes as needed.
- Cut, trim, bone, and carve meats and poultry for cooking.
- Follow prep sheets to prepare items for the next day's meals.
