Requirements

  • Availability to work nights, weekends, and/or holidays as required.
Responsibilities
  • Clean and sanitize plateware, silverware, glassware, pots and pans, utensils, equipment, and work areas in a timely manner.
  • Set up workstations by filling the dish machine, checking chemical levels, presoaking items, and gathering required equipment; replenish supplies as needed.
  • Rinse and scrape dishes, operate the dishwashing machine according to manufacturer specifications, and place clean dishes in assigned storage locations.
  • Promote teamwork and quality service through daily communication and coordination with Catering, Banquets, Outlets, and Maintenance.
  • Check equipment and machinery, and inform the supervisor of hazardous situations, emergencies, or threats to guests, employees, or hotel assets.
  • Clean designated kitchen equipment and areas, including hoods, filters, steam tables, bus tables, carts, ovens, grills, sinks, refrigerators, freezers, service areas, walls, floors, and the kitchen cafeteria dump site or compactor.
  • Use and dispose of grease and kitchen chemicals properly.
  • Empty and clean trash cans, transport garbage containers to dump sites, and follow recycling and composting regulations.
  • Run food to banquet events on all floors.
  • Separate silverware, glassware, and kitchenware.
  • Set up and monitor the pot sink according to health and sanitation procedures.
  • Sweep and mop kitchen floors at the end of each meal period and after spills.
  • Monitor chemicals and water temperature during shifts.
  • Clean and organize work areas and kitchen equipment according to procedures.
  • Assist with inventory by counting china, glassware, and silverware.
  • Keep dishware, pots, pans, silverware, and glassware clean, properly stocked, and stored in appropriate containers.
  • Maintain proper pars in each kitchen.
  • Clean dishes used by the kitchen crew and store all items in their respective places.
  • Polish copper and silver pans when needed.
  • Learn to operate machines using the proper detergents and water temperatures.
  • Keep kitchen floors clean and dry and follow safety procedures.
  • Unload produce and meats into walk-in refrigerators as needed.
  • Maintain cleanliness of walk-in refrigerators.
  • Perform other duties as instructed by supervisors or managers.
