Responsibilities
  • Supervise the Pastry Chef in the operational execution of the pastry department's activities.
  • Manage inventory to minimize waste while maintaining stock levels appropriate for operations.
  • Communicate human-resources needs to the Pastry Chef.
  • Participate in menu conceptualization and production with creativity in collaboration with the Pastry Chef.
  • Ensure all preparations under the role's responsibility follow recipe instructions for methodology, timing, presentation characteristics, and preparation requirements for the next service.
  • Participate in daily, monthly, and annual inventories.
  • Order merchandise in collaboration with the Pastry Chef and Executive Chef.
  • Apply HACCP hygiene procedures and oversee cleaning of pastry equipment and materials.
  • Monitor refrigerated-room stock for all stations and throughout the pastry department.
  • Maintain appropriate storage systems for the pastry department and adjacent areas.
  • Report physical damage or deterioration to the Pastry Chef or Executive Chef.
  • Minimize waste by optimizing the use of raw products and available equipment.
  • Ensure proper use of restaurant equipment and tools.
  • Close the kitchen whether or not the Executive Chef is present.
  • Replace and assume the Pastry Chef position during the chef's absence.
  • Train staff to develop their expertise.
  • Participate in identifying employees with development potential.
  • Retain staff by creating a motivating, cohesive, and respectful work environment.
  • Delegate responsibilities to the Junior Sous-Chef or first Chef de Partie during absences.
  • Be able to replace all lower-level positions on the team.
  • Support pastry teams in maintaining their workstations properly.
  • Promote a positive internal and external image of Paris Society and the restaurant.
  • Participate in checking the pastry and dining-room teams' knowledge of the menus.
  • Ensure the pastry team follows the complete service protocol.
  • Track each table's progress during service using the provided computer system.
  • Control and monitor customer orders.
  • Anticipate customer orders and minimize waiting times.
  • Work closely with the Pastry Chef.
  • Transmit relevant information to immediate supervisors and staff under the role's responsibility.
  • Know the establishment's event calendar.
  • Maintain good relationships with suppliers.
