Miami is no stranger to culinary pop-ups - decadent collaborations that team up for delicious, limited-time evenings. Now, Tacombi, the beloved Mexican Taqueria, is partnering with Houston-based Michelin-starred taquería, Tatemó, bringing its cult-favorite slow-roasted Barbacoa tacos to Brickell. Helmed by chef Emmanuel Chavez, Tatemó serves flavorful slow-roasted Barbacoa marinated in a complex blend of spices of hoja santa, avocado leaf, chile mulato and chile de árbol. The collaboration, which runs for one night only, will pair Tatemó's famous barbacoa and charred habanero salsas with Tacombi's fresh tortillas, Vista Hermosa. Those who miss the pop-up dining experience can enjoy barbacoa tacos at all Tacombi locations for a limited time, starting Wednesday, Jan. 21. "We are honored and excited to partner with chef Emmanuel Chavez and Tatemó to share their tradition with our guests across Tacombi," shares Tacombi Founder Dario Wolos. The maiz-driven restaurant first opened in 2020, hosting underground dinners that expanded into a brick-and-mortar location supporting small farmers in Mexico.
