Requirements
  • High school graduation or equivalent.
  • Previous experience in hospital food preparation.
  • Knowledge of various cooking procedures and methods, including grilling, baking, and boiling.
  • Ability to follow all sanitation procedures.
  • Recent experience managing food services in an acute hospital.
  • Ability to work in a team.
  • Very good communication skills.
  • Excellent physical condition and stamina.
  • Ability to sit and/or stand for long periods of time.
  • Ability to lift and carry up to 10 pounds.
  • Ability to work around hot surfaces.
Responsibilities
  • Determine the types and quantities of meats, vegetables, and soups to prepare by reviewing planned menus.
  • Determine the amount of food needed to meet weekly menus and submit orders to the Nutritional Services Supervisor.
  • Ensure meals are ready at specified times.
  • Consult with the Nutritional Services Supervisor regarding the use of leftovers.
  • Consult the Registered Dietitian on modified diets as necessary.
  • Supervise Nutritional Services workers while they wash, trim, or prepare food.
  • Measure and mix ingredients according to approved recipes using blenders, mixers, grinders, slicers, and similar equipment.
  • Prepare sauces, soups, stews, casseroles, and desserts that meet established dietary guidelines.
  • Cook meat, fish, and fowl using methods such as baking, roasting, broiling, and steaming.
  • Carve meat, fish, and fowl into individual servings according to menu combinations and patient diet orders.
  • Test food being cooked to verify appropriate temperatures and adjust heat controls as necessary.
  • Improve the flavor and texture of food by adding ingredients or seasonings.
  • Observe infection prevention and control practices.
  • Maintain the kitchen in a clean, neat, and organized manner.
  • Perform patient-care duties in an environment that optimizes patient safety and reduces the likelihood of medical or health care errors.
