Requirements
  • At least five years of related progressive experience, or culinary graduate status with at least one year of progressive experience in a hotel or related field.
  • Previous supervisory responsibility is preferred.
  • Food Handlers Certification, in compliance with state requirements.
  • Ability to convey information and ideas clearly.
  • Ability to evaluate and select among alternative courses of action quickly and accurately.
  • Ability to work effectively in stressful, high-pressure situations and maintain composure and objectivity under pressure.

Responsibilities
  • Prepare food items for restaurant and dining outlets, coffee shop, room service, employee cafeteria, and banquets as needed, maintaining high standards for appealing and appetizing products.
  • Complete necessary food and station preparations before service begins so guests are served promptly and efficiently.
  • Assist and supervise on the kitchen line during operating hours to maintain efficiency, productivity, and quality, and support any kitchen position requiring help.
  • Assist with banquet food preparation according to Banquet Event Orders; complete items on time and confirm timing, cover count, and other changes with the Banquet Manager or Supervisor.
  • Prepare food for the Employee Cafeteria as needed.
  • Prepare all food according to standard recipes.
  • Follow the Clean as You Go policy and maintain kitchen sanitation and cleaning schedules; keep storage areas neat, orderly, and clean.
  • Break down buffets and the kitchen line and ensure food and equipment are properly stored at the end of each meal period.
  • Ensure employees practice safe work habits to avoid injury to themselves or others.
  • Enforce hotel policies and house rules and remain familiar with emergency procedures.
  • Ensure employees are attentive, friendly, helpful, and courteous to guests, managers, and other employees.
  • Secure food items and ensure the meat locker, storeroom, and walk-in areas are locked when not in use.
  • Maintain high food-quality standards and identify ways to improve them.
  • Maintain cleanliness and organization of all storage areas.
  • Assist in training staff to operate and maintain kitchen equipment.
  • Attend meetings as required by management and perform other duties as requested by management.
