Requirements
  • At least three years of culinary kitchen management or supervisory experience managing shifts or stations with at least two full-time employees.
  • Prior restaurant kitchen or culinary technical ability.
  • High School diploma or equivalent.
  • ServSafe Certification required.
  • Ability to stand, lift, bend, stretch, reach, push or pull 60 pounds unassisted, and lift or carry 30 pounds unassisted.
  • Knowledge of food cost control, loss and usage guidelines, pars for shift usage, freezer pull, and line setup.
  • Knowledge of proper food temperatures, inventory, ordering, receiving, and storing products.
  • Knowledge of local shopping, dining, entertainment, and travel directions to assist guest inquiries.
  • Knowledge of daily hotel operations, events, procedures, and changes.
  • Knowledge of kitchen disciplines, cooking techniques, and products.
  • Ability to follow recipes for preparation, cooking, serving, and storing.
  • Knife skills and other food preparation skills.
  • Ability to perform job functions with attention to detail, speed, and accuracy; prioritize, organize, and follow up; remain calm and resolve problems using good judgment; follow directions; understand guest service needs; work cohesively with coworkers; work with minimal supervision; and maintain confidentiality of guest and resort information.
  • Ability to ascertain departmental training needs and provide training.
  • Ability to direct staff performance and follow up with corrections when needed.
  • Ability to pass appropriate security clearances.
  • Ability to work any day or shift, including weekends.
  • Ability to work in hot kitchen environments and remain standing or stationary for extended periods.
Responsibilities
  • Manage and lead the daily culinary operations for a three-meal restaurant and banquet operations.
  • Develop, manage, and lead the restaurant and banquet food program.
  • Set culinary standards in conjunction with the Food and Beverage Director and Hotel General Manager.
  • Ensure exceptional quality of ingredients, preparation, and plating of food items.
  • Control labor and operating expenses through planning, budgeting, purchasing decisions, and inventory control while pursuing cost-control and revenue-generation solutions.
  • Keep current with food styles and trends and present concepts and recipes reflecting those trends.
  • Control par levels of mise en place.
  • Develop creative menus for restaurant and catering operations and create recipes, photos, and plating guides for menu items.
  • Work with the kitchen manager on costing, production, recipe execution, and waste management.
  • Select, train, coach, develop, motivate, and evaluate kitchen employees.
  • Perform day-to-day culinary tasks, produce key menu items, lead staff, and manage food-related functions and banquets.
  • Comply with departmental policies, service procedures, and standards.
  • Use and maintain equipment properly.
  • Participate in local and national media and public relations culinary events as an ambassador for the restaurant and hotel.
  • Conduct daily line checks, food reviews, and recipes of the day and provide feedback to the kitchen team, food service staff, and management.
  • Schedule and monitor daily line-up meetings.
  • Anticipate guest and associate needs, respond promptly, and acknowledge guests.
  • Maintain positive guest and associate relations.
  • Resolve guest and associate complaints and ensure guest satisfaction.
  • Maintain cleanliness, sanitation, and organization of assigned work areas.
  • Operate the outlet and production according to HACCP and ServSafe guidelines.
  • Order products for outlet operations according to purchasing procedures.
  • Conduct outlet-specific training for culinary staff.
  • Address and correct culinary issues promptly and fairly.
  • Complete and submit paperwork and attend meetings and training opportunities.
  • Prepare weekly schedules according to the forecast.
  • Coordinate kitchen opening and closing procedures.
