Requirements
  • Some college and/or advanced training in food and beverage management.
  • At least 2 years of related experience, including supervisory experience in a unionized environment, or an equivalent combination of education and experience.
  • A bachelor's degree or higher education qualification in Hotel Management, culinary arts, or a related field is preferred.
  • Must speak the local language.
  • Alcohol awareness certification and/or a food service permit or valid health/food handler card is required as applicable under local law.
Responsibilities
  • Manage everyday activity and plan and assign work to ensure appropriate staffing levels.
  • Develop the team and improve performance through coaching and feedback, and create performance and development goals for colleagues.
  • Train colleagues to ensure compliance with expected standards.
  • Recommend or initiate human resources actions when needed.
  • Ensure all food and beverage equipment is operational and regularly cleaned.
  • Ensure food and beverage facilities, including banquet and convention spaces, are clean and stocked for anticipated business volume; notify engineering of maintenance and repair needs.
  • Establish and achieve quality and guest satisfaction goals, and assist guests with requests and complaints.
  • Manage hotel food and beverage marketing programs and participate in system-wide food and beverage marketing programs and promotions.
  • Monitor competitor activity and industry innovation, and review and approve menu designs and concepts with the Executive Chef.
  • Ensure food and beverages are secured and stored safely, and keep stock replenished to minimize waste.
  • Handle food and beverage inventory procedures and determine minimum and maximum stock levels for food, beverages, materials, and equipment.
  • Perform other ad hoc duties as needed.
  • Help prepare the hotel's annual budget and set departmental goals.
  • Monitor the budget and control expenses, focusing on food, beverage, and labor costs.
  • Work with the catering office to identify additional sales opportunities and enhance revenue.
  • Drive promotions that deliver dining experiences at good value.
  • Ensure credit and financial transactions are handled securely.
  • Supervise team members across one or more food and beverage outlets, kitchens, and potentially banquet facilities; oversee subordinate managers or supervisors as applicable.
