Bakoma partners with AVEVA to build a smart dairy.

Bakoma partners with AVEVA to build a smart dairy. Bakoma unifies its dairy processing plant using AVEVA System Platform, achieving real-time data visibility and total farm-to-fridge traceability. The Polish processing giant unifies scattered SCADA data into a central digital brain to achieve end-to-end traceability and real-time processing optimization. Polish dairy manufacturer Bakoma is actively executing a comprehensive digital transformation strategy across its manufacturing facilities to streamline the movement of raw milk from intake to final packaging. Processing substantial daily volumes of raw milk into a diverse portfolio of yogurts, desserts, and fresh dairy products requires exceptional operational precision across pasteurization, fermentation, and blending stages. To eliminate efficiency bottlenecks, the corporate processor has prioritized structural modernization to replace legacy infrastructure with an integrated manufacturing ecosystem capable of managing highly dynamic production environments. Historically, Bakoma's operational data was highly fragmented, scattered across disconnected SCADA platforms, physical screens, and conflicting naming conventions. Plant operators were forced to manually cross-reference different interfaces and move between isolated floor stations, which slowed down diagnostics and complicated new employee onboarding. To resolve these friction points, corporate leadership sought a unified data model capable of connecting raw milk intake parameters, active production orders, laboratory quality metrics, and finished inventory status onto a single screen. In collaboration with industrial software provider AVEVA and specialized system integrator Explitia, Bakoma deployed a centralized digital architecture powered by AVEVA System Platform and AVEVA Historian. This unified framework serves as the functional brain of the smart factory, successfully bridging the traditional divide between shop-floor SCADA operations, Manufacturing Execution Systems (MES), and Enterprise Resource Planning (ERP) layers. By centralizing and contextualizing live data streams from packaging lines, processing equipment, and batch orders, the platform delivers full real-time operational visibility to plant managers. A primary advantage of this digital integration is the implementation of rigorous end-to-end process monitoring, which is critical for maintaining food safety and compliance within hygiene-sensitive dairy lines. Bakoma now exercises automated, real-time surveillance over its Clean-in-Place (CIP) systems, sterilization cycles, and core fermentation variables, allowing technical teams to catch process deviations before they compromise batch quality. Furthermore, the system automatically generates digital documentation and reports, providing a traceable data trail that satisfies the strict auditing requirements of retail partners and food safety regulators. The successful rollout has yielded significant operational metrics, notably reducing the cognitive load on plant personnel through standardized interfaces, uniform alarm logic, and consistent data structures across all departments. This systematic standardization allows operators to seamlessly rotate between production zones with minimal retraining while accelerating onboarding timelines for new hires. By combining human workflows with intelligent industrial software, the modern processing facility has successfully shifted from rigid production standards to flexible, data-driven mass customization.
