Requirements
  • Availability from 7:30 a.m. to 4 p.m. on one weekend day, either Saturday or Sunday.
  • Prior experience working in a commercial kitchen or production facility is preferred, especially in a team environment.
  • Comfort with repetitive tasks.
  • Ability to remain positive amid shifting priorities or broken machines.
  • Ability to remain on your feet for most of the day and occasionally lift objects weighing up to 50 pounds.
  • Ability to stand, bend, squat, and use hands for tasks requiring fine and gross motor skills.
Responsibilities
  • Learn and perform all steps of chocolate making, including sorting cocoa beans, roasting, winnowing, starting batches, refining and conching, tempering, grinding, foiling, and wrapping and labeling bars.
  • Contribute toward daily production goals for sorting cocoa beans, roasting, tempering bars, and making conches.
  • Walk through the factory with a Senior Chocolate Maker, describe processes and procedures at each station, and explain how chocolate is made.
  • Taste and evaluate chocolate bars for flavor and quality and identify when a batch's flavor or consistency is off.
  • Blindly identify the country of origin of at least seven chocolate bars.
  • Participate in Continuing Chocolate Education classes and continue learning about chocolate.
  • Clean and maintain the production facility and machines, including washing bar molds and bins, sweeping the floor, and using the bucket washer.
  • Operate all chocolate machines safely and follow machine standard operating procedures and required procedures.
  • Work with the team to meet daily production goals.
  • Be a welcoming presence for tour groups, filming crews, and guests while maintaining safety awareness.
  • Ask questions, assist with projects, and see tasks through to completion.

Dandelion Chocolate makes bean-to-bar chocolate by sourcing cocoa beans directly from origin and handling every step of the process in-house. Their product work flow includes roasting, cracking, winnowing, grinding, refining, and tempering small batches before molding and packaging bars, plus confections.
