Responsibilities
  • Support the Head Chef and Sous Chef in the smooth running of the kitchen and the delivery of consistent, high-quality, delicious, and nutritious dishes to residents.
  • Take full responsibility for the kitchen in the absence of the Head Chef and Sous Chef while maintaining established standards.
  • Prepare and present dishes in line with KYN standards.
  • Maintain high standards of cleanliness and best practices.
  • Drive consistency of the food offering and ensure menus are delivered to specification.
  • Monitor health and safety, compliance, and procedures across the kitchen and dining teams.
  • Ensure the team adheres to kitchen service standards.
  • Take invoices for deliveries.
  • Support teams in understanding menus and ingredients so they can explain them effectively to residents, family members, and guests.
  • Complete mise en place to meet forecasted demands.
  • Record food and storage-area temperature checks, report variances immediately, and ensure statutory requirements are met.
  • Maintain high standards of personal appearance and working methods.
  • Build relationships with residents and understand their needs.
  • Manage and oversee kitchen stock in the absence of the Head Chef and Sous Chef.
  • Report damage, hazards, and wear and tear in work areas.
  • Store and rotate food correctly to minimise wastage using labelling and dating processes.
  • Complete opening and closing checklists daily.
  • Maintain a clean, tidy, and orderly work environment in line with brand standards and legal requirements.
  • Adhere to security and control procedures.
  • Minimise wastage through stock rotation and portion control.
  • Store and rotate stock according to company policies and food safety regulations, including recording temperature checks and reporting variances for correction.
  • Apply health and safety and food safety practices within the kitchen.
  • Coach relevant team members on food safety standards and support adherence to the food safety management system.
  • Ensure the kitchen has adequate supplies of clean utensils, crockery, and other equipment.
  • Protect residents' privacy and keep their identities and confidential information secure.
  • Keep residents' dietary-requirement data accurate, current, secure, and confidential.
  • Take an active role in coaching, training, and developing the team.
  • Lead by example and act as a role model to the kitchen team in work ethic, service quality, and professional skills.
  • Communicate, liaise, and build relationships with internal and external stakeholders.
  • Support the integration and mentorship of students undertaking placements at KYN.
  • Actively support research activity at KYN.
