Requirements
  • Proven experience as a Sushi Chef in a fast-paced environment is preferred, although full training will be provided.
  • Strong knowledge of food preparation, food safety, hygiene standards, and HACCP is required.
  • Experience supporting or supervising teams is required; multi-site experience is advantageous.
  • Ability to communicate effectively and work supportively with colleagues is required.
  • Ability to work independently and manage priorities across multiple locations is required.
  • Willingness to travel daily within the assigned region is required.
  • Reliable transportation for early-morning commuting is required.
  • Ability to prepare fresh ingredients by hand, including meat and raw fish products, each shift is required.
  • Ability to label products accurately for food safety and allergen compliance is required.
  • Experience placing weekly orders, rotating stock daily, and producing monthly stock takes is required.
  • Ability to start shifts as early as 6 a.m. on some days is required.
  • Ability to maintain food and health and safety compliance standards and meet Environmental Health Officer expectations is required.
Responsibilities
  • Provide daily support to Sushi Gourmet kiosks both on-site and remotely.
  • Guide, coach, and encourage kiosk colleagues to improve performance and engagement.
  • Ensure consistent sushi quality, presentation, and food safety standards across kiosks.
  • Conduct occasional kiosk audits for compliance with company standards and procedures.
  • Finalize and support ordering processes for kiosks in the assigned area.
  • Review and validate submissions on the company compliance platform.
  • Assist with onboarding and training new team members.
  • Support new kiosk openings and operational rollouts.
  • Be accountable for kiosk and team audit standards for food and health and safety compliance.
  • Ensure teams maintain cleanliness and food safety standards on site.
  • Plan and organize work across multiple locations.
  • Prepare fresh ingredients, including meat and raw fish products, during each shift.
  • Label products accurately in accordance with food safety and allergen requirements.
  • Place weekly orders, rotate stock daily, and produce monthly stock takes.
