Requirements
  • Hold a CAP Boucherie qualification.
  • Have significant butcher experience in mass retail.
  • Have confirmed experience as a butcher or deputy butcher, depending on experience level.
  • Provide customer advice on cooking and recipes and build customer loyalty through service and additional sales.
Responsibilities
  • Co-lead a team of three butchers with the Head Butcher and co-manage traditional and self-service butcher operations.
  • Participate in sourcing carcasses, half-carcasses, and ready-to-cut products.
  • Make purchases in the Head Butcher’s absence, negotiating merchandise quality and base and direct prices.
  • Select the product range according to customer profile, current promotions, and seasonal operations.
  • Perform cutting and deboning.
  • Help organize the team’s work according to department needs, including preparing and packaging self-service products and stocking the traditional counter.
  • Prepare products such as roasts, paupiettes, alouettes, and sausages.
  • Train the team on preparation and cutting practices.
  • Ensure cutting quality and optimize labor and material yields.
  • Help implement hygiene and traceability standards in accordance with applicable legal requirements.
  • Support and train the team on temperatures, production and product traceability, and material accounting.
  • Sell products through a consultative approach, including cooking advice, recipes, customer loyalty, and additional sales.
