Requirements
  • 5-7 years of experience planning and preparing hot and cold foods for service and coordinating the work of a culinary crew in a restaurant, hotel, or institutional operation.
  • Expertise or a high level of interest in various cuisines and cooking methods, quantity food preparation and batch cookery, and general culinary techniques and skills, with demonstrated mastery of all cooking methods.
  • Practical experience leading a kitchen crew in a logical, efficient, and fair manner; coaching and training culinary skills and techniques; designing plate and buffet presentations; and assisting with developing recipes and menus.
  • Comprehensive knowledge and understanding of kitchen sanitation and food safety practices, with the ability to enforce safe food handling guidelines.
  • Ability to be accountable for the quality of products produced by others, meet tight deadlines, and contribute to kitchen and action station production.
  • Ability to read, speak, and understand English and working knowledge of basic food service mathematics.
  • ServSafe Certification.
  • Ability to work during fast-paced and high-pressure periods.
Responsibilities
  • Demonstrate mastery of cooking techniques, including cook-chill technology, recipe development and testing, and preparation of a wide variety of international cuisines.
  • Prepare and present a variety of hot and cold foods using standardized department recipes, forecasted quantities, and various preparation methods.
  • Assist with evaluating the daily kitchen workload, suggest job assignments, and oversee cooks and other kitchen personnel in the absence of the unit Sous Chef or manager.
  • Evaluate finished products for quality and assist with addressing sub-quality production and presentation by analyzing problems and implementing solutions with the culinary leadership team.
  • Work in all kitchen areas as needed while focusing on production and presentation.
  • Research, develop, test, and adjust recipes for all production areas.
  • Execute kitchen sanitation and food safety practices; keep kitchen staff on task; and assign side work and equipment maintenance duties as needed.
  • Assist, coordinate, and expedite food preparation from the kitchen and action stations while ensuring safe food handling and on-time production.
  • Assist in planning and executing production and presentation for assigned meals, including designing and executing buffet presentations.
  • Collaborate with the Sous Chef and management to implement the unit's culinary goals and management initiatives.
  • Prepare specialty meals in a timely manner and meet deadlines for those meals.
  • Perform line checks and properly complete standard forms, service records, and checklists.
  • Follow department scheduling, timekeeping, and time-off procedures.
Desired Qualifications
  • Associate's Degree in Culinary Arts.
  • Experience cooking and leading in a university or institutional setting in a top-tier program.
  • Experience using computers for work and the capability and willingness to learn the FoodPro software system.
  • Experience supervising the culinary work of others.
