  • Must have experience in food service.
  • Must be able to read, write, understand and follow directions.
  • Must be able to lift, push, or pull a minimum of 50 pounds.
  • Must maintain cleanliness of the kitchen within North Carolina Environmental Health Standards.
  • Must have an understanding of North Carolina Rules and Regulations.
  • Must have no substantiated findings on the North Carolina Personnel Registry or Health Care Program.
  • Must have a clear SBI and DMV record and maintain them during employment.
  • Must wear slip-resistant shoes while working in dietary at all times.
Responsibilities
  • Prepare required menus at least one week in advance, in writing, with portions specified and snacks shown, ensuring food is available so each resident receives at least three nutritionally adequate and palatable meals daily.
  • Plan therapeutic menus according to physicians' orders in consultation with a registered dietitian.
  • Record menu substitutions on the menu calendar before food is served.
  • Post menus in the kitchen for food service staff and make them available to residents according to home policy.
  • Maintain an up-to-date food preference list for each resident.
  • Prepare and serve three meals daily at regular hours, with at least 10 hours between breakfast and dinner.
  • Ensure hot foods are served above 140 degrees Fahrenheit and cold foods below 45 degrees Fahrenheit.
  • Prepare nutritional bag lunches for residents attending a day program away from the Adult Care Home, considering foods that may become contaminated without refrigeration.
  • Prepare and ensure that appropriate menu snacks are served daily.
  • Take inventory and purchase food and food supplies within the facility budget and administrative policy.
  • Check food deliveries for accuracy, sign invoices and food receipts, and file them for the ED/Administrator's review.
  • Help maintain each resident's self-respect, personal dignity, and physical safety.
  • Maintain confidentiality regarding resident information and adhere to applicable requirements.
  • Work cooperatively with other staff and relate favorably to residents and their families.
  • Apply the home's accident, fire safety, OSHA, and emergency procedures.
  • Be familiar with the Adult Care Home Residents' Bill of Rights and assist residents in exercising these rights.
  • Treat Adult Care Home equipment carefully and use supplies appropriately.
  • Read and adhere to all Adult Care Home and employee policies.
  • Participate in job-related continuing education as required by the ED/Administrator.
  • Perform other related duties as assigned or required by circumstances.
  • Notify the ED/Administrator and RCC of residents' irregular eating habits and special needs according to home policy.
