In 1912, in a small building in the middle of Sao Paulo, Lacta was founded under the name "Société Anonyme des Chocolats Suisses". Today the two distributors dominate the chocolate industry in Brazil, as well as globally. So what actually is this delicious treat that has taken the world by storm over the last 100 years? Bis are, as stated above, small, light and crunchy cookie wafers layered and covered with chocolate and individually wrapped. The production process starts, however, in the fields, where cocoa beans are farmed and harvested by hand to ensure quality, after a lengthy and precise fermentation and prep process, where the beans are constantly tested for control, the beans are then sent to the factories to finish production. In the factory, the beans are meticulously processed to exclude any impurities, treated with heat and air pressure, and mixed with balancing ingredients like sugar to round out the iconic taste. The (now) chocolate is then finished with more heat and motion to fully incorporate everything into the chocolate and allowed to rest to reach its full potential of flavor. Automation makes the assembly process efficient and dependable, with machines carefully layering wafer and chocolate, and ensuring each piece is level and without any air bubbles. The Bis are then perfectly wrapped, packaged, and ready for shipment. These little guys go on quite the journey before they end up in your hand! It's no doubt that Bis has cemented itself as a snack-staple in Brazil, as well as the rest of the world. Brazilians quickly adopted it as the family favorite for special events, a commuters quick bite, and of course a children's classic. Hall spent nearly 11 years at Kraft Heinz, holding various leadership positions and overseeing such brands as Heinz, Kraft and Philadelphia.
