Requirements
  • Hold a CAP or vocational baccalaureate in cuisine.
  • Have demonstrated technical expertise working with high volumes of approximately 400 to 600 covers.
  • Be proficient in English.
  • Demonstrate teamwork and leadership.
  • Be responsive and able to manage stress effectively.
  • Demonstrate customer focus, rigor, and organization.
Responsibilities
  • Organize mise en place and prepare the breakfast buffet according to projected activity.
  • Prepare hot and cold dishes in accordance with recipes and establishment standards.
  • Ensure the quality, freshness, and presentation of products throughout service.
  • Restock the buffet and anticipate activity peaks for nearly 800 breakfasts per day.
  • Adjust production to meet demand while limiting shortages and food waste.
  • Ensure compliance with hygiene, food-safety, and HACCP procedures.
  • Help control breakfast inventory and food cost.
  • Organize and support the work of commis and apprentices in the assigned area.
  • Collaborate with kitchen and dining-room teams to ensure smooth service.
  • Contribute to continuous improvement of the offering and the customer experience.
