Responsibilities
- Ensure all culinary preparations comply with hygiene standards.
- Manage and motivate the kitchen team to provide high-quality service to customers.
- Co-develop menu creations with Fitz Group management in line with the restaurant’s positioning, market, competition, and trends.
- Prioritize ingredients and simplicity in dishes.
- Meet Fitz Group’s gross-margin objectives.
- Approve and enforce the technical specification sheets for each recipe.
- Manage purchasing and inspect received goods.
- Ensure proper stock management and accurate monthly inventories.
- Enforce Fitz Group procedures, including hygiene, cleaning, safety, internal regulations, and other internal procedures.
- Support initiatives implemented by management and provide leadership within the team to deliver new projects.
- Promote a positive image as an ambassador for Fitz Group and the restaurant.
- Ensure each team member follows their job description.
- Coordinate work with the dining-room team to ensure smooth service.
- Ensure the kitchen team is properly informed about restaurant customer events.
- Participate in recruitment.
- Organize the onboarding and integration of new employees.
- Prepare kitchen-team work schedules in line with forecast activity.
- Conduct annual performance evaluations and set objectives for team members.
- Analyze the team’s training needs.
- Ensure the proper use and longevity of equipment and materials entrusted to the chef and the teams.
