About the job
- A vocational diploma in institutional cooking or equivalent training.
- At least seven years of experience in a high-volume remote FIFO camp.
- Demonstrated experience managing teams and supervising employees.
- Experience planning menus, creating recipes, and managing large-scale food production.
- Experience in food service, catering, and organizing banquets or events.
- Strong knowledge of food and labor cost management, purchasing, and inventory.
- Ability to analyze financial data and work with budgets and operating results.
- Ability to plan and organize work and manage time effectively.
- Ability to manage multiple priorities and work effectively under pressure.
- Ability to train, motivate, and develop team members.
- Ability to work in a multicultural environment.
- Strong customer-service orientation.
- Functional spoken and written French and English.
- Proficiency with FMS, Excel, Word, and Outlook.
- Valid MAPAQ certification.
- Valid WHMIS training.
- Availability to work a 14-days-on, 14-days-off rotation.
- Ability to work and live in a remote camp during rotation periods.
- Successful completion of a criminal background check.
- Support the Corporate Executive Chef in the daily management of culinary operations.
- Plan, coordinate, and supervise meal preparation and service in a high-volume environment, including room management.
- Organize catering services, events, and special client requests.
- Develop varied, creative menus adapted to client needs.
- Create and standardize recipes to ensure quality, consistency, and profitability.
- Oversee ordering, purchasing, receiving goods, and inventory management.
- Analyze and interpret financial data related to menus, food costs, labor, purchasing, and inventory.
- Manage fixed and variable costs, including food costs and financial results.
- Participate in preparing and managing work schedules.
- Train, guide, engage, and develop team members.
- Foster an inclusive, respectful, multicultural, and collaborative work environment.
- Build accountable, efficient teams focused on achieving results.
- Maintain a high level of customer service and a professional relationship with the client.
- Manage multiple priorities in a dynamic and demanding environment.
- Ensure compliance with quality, food safety, health, and safety standards.

- Perform other related duties required to ensure smooth operations.
- A Red Seal trade qualification is considered an asset.

Uría Menéndez has advised Portobello Capital on the sale of Grupo Mediterránea de Catering to Sodexo, a French listed company.
Sodexo has signed an agreement to acquire CRH Catering, a leading convenience sector operator in the Mid-Atlantic U.S., to enhance its InReach convenience offering. This acquisition expands Sodexo's presence on the East Coast and adds services like micro-markets and vending. The deal supports Sodexo's goal to generate $500 million in revenue with InReach by the end of 2025. The acquisition is expected to close in the first half of fiscal 2025.
