About the job
- Red Seal Certification is required.
- Five to seven years of experience in a Chef role leading a team is required.
- Knowledge of industry standards and legislative policies and procedures is required.
- Experience in a unionized environment is an asset.
- Ability to work under pressure in a fast-paced, team-centric, safety-driven environment is required.
- Proven organizational skills and strong computer capabilities, including use of Microsoft Office, are required.
- Ability to work independently, solve problems, and provide solutions is required.
- Experience in sustainable and plant-based menu preparation is an asset.
- Previous high-volume catering experience is an asset.
- Coordinate and direct food program activities for the site.
- Direct daily food production operations, including menu planning, purchasing and ordering, inventory, food preparation, and cost management.
- Manage food program financials, including labor costs, food costs, inventory, equipment, and materials.
- Train the culinary team as a technical expert.
- Liaise with the management team to ensure food offerings across campus meet students’ needs.
- Establish operating standards and implement quality improvements.
- Engage with internal resources to use and share company innovations.
- Establish and maintain business relationships with vendors and suppliers.
- Promote and assist in marketing the food program to internal and external audiences.
- Continuously analyze the campus-wide food program to identify efficiencies and opportunities in culinary operations.
- Meet and collaborate on university initiatives to advance agreed-upon efforts and provide feedback.
- Ensure compliance with company standards and provincial and federal legislation.
- Ensure compliance with food safety, food system management, and Hazard Analysis and Critical Control Point (HACCP) policies and procedures.
