Requirements
  • Two to three years of culinary and wine experience, preferably in a fine dining environment.
  • A bachelor's degree and/or culinary degree is preferred.
  • Ability to communicate and organize effectively and interact professionally and diplomatically with a variety of business partners.
  • Fluency in Microsoft Office Suite, including advanced Microsoft Excel and Microsoft PowerPoint.
  • Prior experience with accounting software, point-of-sale systems, and payroll or human resources information systems.
  • At least two years of experience in the restaurant or hospitality industry.
  • Working knowledge of restaurant management and operations.
  • Strong computer skills with working knowledge of Microsoft Excel and Microsoft Word.
  • Ability to read and interpret general business documents.
  • Ability to write reports and business correspondence.
  • Ability to present information effectively and respond to questions from partners, managers, guests, and executives.
  • Ability to stand, walk, sit, talk, hear, and use hands and arms for extended periods.
  • Ability to bend, stoop, kneel, crouch, or crawl as required.
  • Ability to lift or move up to 30 pounds.
  • Ability to work standing for long periods and safely lift and maneuver plates, cases of water or wine, chairs, and dining room tables.
Responsibilities
  • Train and assist in the operations of Sorelle while overseeing and coordinating planning, organization, training, and leadership activities.
  • Promote the culture, values, and mission of Sorelle through integrity, honesty, and operational knowledge.
  • Ensure that guests receive responsive, professional, and gracious service.
  • Follow Sorelle management philosophies, policies, service standards, and operational procedures.
  • Represent the restaurant professionally through communication, cooperation, and relationships with business partners.
  • Collaborate with the management team to create a respectful work environment and support team learning, growth, and development.
  • Ensure service standards meet applicable outside accreditation standards and adhere to Sorelle's service philosophies.
  • Achieve objectives for sales, service, quality, facility appearance, sanitation, and cleanliness through colleague training and a productive work environment.
  • Control cash and other receipts by following cash-handling and reconciliation procedures.
  • Participate in daily summary operations and weekly managers meetings.
  • Write weekly staff schedules and schedule labor according to anticipated business activity while meeting staffing and labor-cost objectives.
  • Maintain business levels and ensure budgeted restaurant targets are met.
  • Manage the restaurant atmosphere, including lighting, music volume, and crowd density, according to management standards.
  • Conduct pre-shift meetings and keep staff informed about restaurant and industry developments.
  • Maintain monthly management notes establishing guidelines for future service and restaurant operations.
  • Conduct staff interviews and make hiring recommendations according to company policies.
  • Organize and lead staff training classes and food and wine seminars.
  • Oversee the Host department and ensure that the guest experience meets restaurant standards.
  • Support the front-of-house team in all aspects of dining room service.
  • Submit accurate time-clock and labor reports to accounting and follow payroll practices.
  • Cost kitchen and dining room schedules and sales forecasts to align scheduling with budgeted labor percentages.
  • Assist with accurate and current monthly liquor and beer transfers.
  • Prepare month-end accrual sheets for uncounted invoices and credits.
  • Assist accounting with collecting outstanding balances from hourly colleagues.
  • Assist with on-site and off-site special events and photo shoots.
  • Update the Sorelle and partner websites with current menus, wine lists, and special-event and private-dining information.
  • Assist in preparing financial reports for weekly manager meetings and monthly profit-and-loss reviews.
  • Prepare operational reports and maintain records for purchases, sales, and requisitions.
  • Develop relationships with internal and external customers through effective communication.
  • Source, order, and restock restaurant office supplies.
  • Maintain the crash kit, maintenance resources, restaurant point-of-sale system, and reservations system.
  • Serve as the point of contact for restaurant repairs and maintenance.
  • Understand and comply with applicable federal, state, county, and municipal health, safety, and labor regulations.
