Requirements
  • A college degree or equivalent college-level qualification is required.
  • At least one year of professional experience as a Demi Chef de Partie or in an equivalent kitchen position within a fine-dining or luxury hospitality establishment is required.
  • Proficiency in computer systems and kitchen management software applications is required.
  • Comprehensive knowledge of classical and contemporary culinary techniques, including butchering, portioning, and preparation of seafood, fish, poultry, beef, pork, game meats, and variety meats, is required.
  • Competency in HACCP compliance and food safety regulations is required.
  • Knowledge of recipe standardization, cost calculation, and mise en place preparation is required.
  • The ability to work effectively under pressure while maintaining quality and presentation standards is required.
  • Fluency in English is required.
  • The employee must follow hotel, kitchen, sanitary, safety, environmental, and municipality regulations and procedures.
  • The employee must be able to work unsupervised, adapt to business demands and working hours, and work in other kitchen areas when needed.
Responsibilities
  • Use forecasts and reports to plan food production, purchasing, manpower, and uninterrupted kitchen service.
  • Prepare requisitions for items needed for the following day with assistance from the Chef de Partie or senior chef.
  • Prioritize, plan, and organize daily tasks for the employee and team to ensure timely delivery.
  • Motivate, supervise, and serve as a role model for kitchen employees.
  • Run the day-to-day operation of an assigned kitchen area in the absence of the Chef de Partie or senior chef.
  • Taste and season food and verify its presentation, quality, and compliance with standards before service.
  • Distribute work to employees and follow up on instructions according to hotel standards.
  • Expedite the food pass for à la carte restaurants.
  • Conduct kitchen briefings, communicate information, and confirm staff understanding.
  • Discipline employees and ensure the quality of their work in the absence of a senior chef.
  • Act as a liaison between executive and senior chefs and line employees.
  • Create, prepare, and present menu items and specials, and prepare recipes and cost calculations.
  • Prepare stocks, sauces, meats, seafood, and other menu items.
  • Maintain mise en place for the next shift, use production lists, and follow shift-handover procedures.
  • Accommodate food-service requests concerning guests’ dietary requirements, personal preferences, and requests when possible.
  • Handle and rotate food according to established procedures.
  • Prepare and plate food orders from food-and-beverage staff accurately and on time.
  • Assist the Chef de Partie or senior chef with mise en place preparation and complete mise en place pars when setting up the station.
  • Set up the assigned station properly and on time for each service period.
  • Prepare food according to recipes designated by the Chef de Cuisine or senior chef and ensure quality and quantity meet standards.
  • Notify the Chef de Cuisine or senior chef of problems or complaints as they arise.
  • Assist with same-day and advance preparation for other stations as instructed.
  • Cover, date, and label food items placed in storage.
  • Clean and maintain ovens, kitchen equipment, work areas, refrigerators, and work surfaces throughout the day.
  • Assist and direct stewards with daily cleaning tasks.
  • Verify that scheduled staff are present and signed in.
  • Complete administrative paperwork, including food transfers, human-resource forms, scheduling, and recipes.
  • Communicate employee and work-performance information to the Executive Chef, Executive Sous Chef, or senior chef.
  • Complete daily log sheets and attend kitchen meetings while on duty.
  • Respond appropriately during hotel emergencies and safety situations and help enforce safe work habits.
  • Sign for tools, knives, uniforms, and other issued equipment and accept responsibility for loss or damage.
  • Turn off equipment and complete final safety checks before leaving the section.
  • Maintain resource efficiency through responsible energy and water consumption, waste reduction, sustainable purchasing, and environmental compliance.
Desired Qualifications
  • Additional language proficiency is advantageous.
  • Participate in cross-training and learn, test, and sample world cuisines through hotel training or self-directed research and development.
