About the job
- The employee must be familiar with and adhere to all liquor liability laws, including the Dram Shop Act and prohibitions on serving alcohol to intoxicated guests or minors.
- The employee must know emergency procedures, including cardiopulmonary resuscitation, and work to prevent accidents.
- The employee must be able to work as a server, bartender, host, in-room dining server, or minibar attendant to cover shifts as needed.
- The employee must be able to lead by example, communicate clearly with all departments, proactively resolve issues, solve guest problems, recover guests, and create a positive guest experience.
- The employee must be able to open and close all outlets, including closing employees' banks.
- Ensure proper training and supervision of all personnel while delivering prompt and courteous service in compliance with Food and Beverage standards and company policies and procedures.
- Manage assigned shifts and assist with overall management and department supervision.
- Supervise and coordinate assigned shifts, check staff punctuality and grooming-standard compliance, and conduct pre-shift meetings.
- Complete environmental checklists for the dining room, lobby bar, in-room dining, and pool bar.
- Spot-check liquor pars, order daily supplies, and monitor food and liquor requisitions and outlet replenishment.
- Follow up on established training steps and observe, teach, and correct staff service.
- Handle guest comments and complaints, ensure guest satisfaction, communicate with guests, receive feedback, and monitor each guest experience.
- Stay on the floor during peak hours and assist with in-room dining, minibar, and other front-of-house Food and Beverage positions when business requires.
- Examine food preparation and beverage presentation.
- Check outlet setup and cleanliness, including public areas such as the Uva patio, pool deck, and restrooms.
- Review amenity and door-knob orders and provide the information to the culinary team.
- Check liquor-room cleanliness and ensure first-in, first-out inventory rotation.
- Receive juices, dairy, liquors, and wine orders and organize them in the liquor room using first-in, first-out inventory rotation.
- Ensure minibar attendants complete the charges report and submit it to the front desk by 1 p.m.
- Complete Food and Beverage reports and communicate 86 items to the front-of-house team through coordination with the culinary team.
- Maintain the condition of Food and Beverage outlets and perform administrative responsibilities.
- Assist the manager with scheduling, forecasting, inventories, and payroll completion.
- Participate in interviewing candidates for open Food and Beverage department positions.
- Prepare and follow up on maintenance requests.
- Control costs, monitor food waste, and monitor labor and payroll costs.
- Check bar controls, shot-glass use, red-lining procedures, and completely empty bottles.
- Perform other duties assigned by management.
