Requirements
  • A high school diploma, GED certificate, or other proof of education completion at the same or higher level, plus one year of experience in a commercial food service facility, full-service restaurant, or other food-preparing establishment; alternatively, an associate's degree in Food Service Management, Foods and Hospitality Service, or a directly related field.
  • Obtain a Food Handlers Permit within 30 days of hire.
  • Work in a secure institutional setting and enforce security protocols, including area inspections and searches of adults in custody for contraband.
  • Meet the minimum qualifications by the job posting close date.
  • Pass a Criminal Justice Information Systems fingerprint-based background check and maintain eligibility.
Responsibilities
  • Coordinate, assign, and supervise adults-in-custody work crews; enforce rules, procedures, and security; provide training and evaluate performance; maintain discipline and cleanliness; conduct contraband searches; monitor timecards and work-area conditions.
  • Lead adults in custody in preparing and cooking meals according to menus and recipes; operate commercial kitchen equipment; ensure proper portioning and quality; assist with special diets and suggest menu changes; plan cooking schedules and minimize food waste.
  • Oversee kitchen cleanliness and hygiene; ensure proper food storage and equipment sanitation; manage dishwashing temperatures and supply rotation.
  • Perform inventory checks, request supplies, verify deliveries, assist with food ordering, and direct unloading and storage of supplies.
  • Maintain records of food prepared and served, leftovers, inventory, and adults-in-custody work hours.
Desired Qualifications
  • Manage teams or crews of up to 70 or more individuals.
  • Have experience managing, supervising, or leading a kitchen in a restaurant, school cafeteria, military dining facility, or government or private food establishment.
  • Have demonstrated experience cooking a variety of foods, including vegetables, desserts, breads, and main entrees.
  • Know progressive cooking techniques that minimize waste for cook-to-serve foods.
  • Know food temperature safety zones.
  • Be able to instruct work crews in proper procedures for maintaining a high degree of sanitation in the work area.
  • Maintain order while fostering a positive work environment.
  • Hold a ServSafe Food Protection Manager Certificate.
